Designed exclusively for Sur La Table, Miyabi Artisan knives feature an industry-leading micro-carbide SG2 core plated in nickel and stainless steel for a dramatic textured finish and exceptional performance.

Each knife is hand-honed using a blend of traditional methods and cutting-edge techniques, resulting in a true katana edge that glides effortlessly through almost any food. The uniquely shaped handle is constructed from beautiful cocobolo-rosewood pakkawood with handsome decorative embellishments and rests comfortably and securely in the hand.

Sur La Table Store
I currently have several Miyabi Artisan SG2 knives and love them. I was considering the 5" Utility knife, but felt the Prep Knife would better suit my needs. I'm looking forward to adding this knife to my set.

I have the Chef knife and love it. Cuts through items with ease and feels great in the hand. I have several Shun and Global knives and love them all - at the same time, this knife feels different in the hand and seems to fit like a glove and I love how sharp it is. I can't stand a dull knife.

BEST ANSWER: Typically knives with D shaped handles are not good for left handed chefs.

BEST ANSWER: If you can hold it in the 15° angle, yes. I would defer to Sur La Table. I use my 15 degree Chefs Mate honer / sharpener.
