PATENTED NONSTICK CONSTRUCTION
Unlike most nonstick cookware, which relies on a coating, Green Tek™ nonstick cooking surface is created by firing a ceramic-titanium compound into the pan at 36,000°F. The ceramic-titanium particles briefly liquefy and permanently anchor themselves to the pan. A specially formulated nonstick compound is then embedded in the surface, ensuring a lifetime of use without peeling or interacting with food.

Perfect for eggs
This is smaller than I expected. As one reviewer noted, the top is the width, the bottom is about 2 inches smaller. It's perfect for eggs, or one pork chop, one burger, etc. I LOVE the fact that it doesn't leach out toxic chemicals into my food! Conducts heat well, cleans easily. This is my first Scan Pan and I will be purchasing more. Scan Pan is by far my favorite non-stick pan. I learned about Scan Pan from a cooking class I took at Sur La Table. Once I used it in class, I knew I had to have one. Or two

Small!
This pan offers everything as advertised, but is very small! The 8"" is measured across the top. The bottom of the pan is less than 6"". Be warned.
Someone else commented that it wasn't good for an induction cook-top, but for me it works great on mine

Great pan for eggs. Eggs do not stick so clean up is easy. This is a quality product.

Love the Scarpan
I have other quality cookware, but Scanpan is my favorite. If I wasn't already well-stocked I would get an entire set of these. The Pro IQ version has metal, not plastic, handles which stay cool while cooking.

Durable?
I like this pan for cooking eggs, and I love that it's not leaching weird stuff into my food. However, I am disappointed in the durability for the price. The pan slipped off of the full dish drainer onto the hardwood floor ONCE, and now it has a flat side. If it had a lid, it wouldn't fit now. So I guess the moral of the story is to immediately hand dry it.

Not sure what makes this a 79$ pan
Not sure what makes this a 79$ pan -

Time will tell if the finish holds up for a very long time.

I bought it to replace a cheapie cuisinart non-stick pan that I bought at a big box and beyond store for like 19$. That thing worked very much like this scanpan does for about 3 years. Then the non-stick finish got gummy so I decided to replace it.

This pan I find to be pretty much the same, except worse, because part of the handle closest to the pan gets really hot which shocked me. That is not a feature I am looking for in a high end frying pan.

If the non-stick does last for life/more than 5 years as they claim, then I will see the value in this pan. So I'll have to wait and see to make a final judgement call

Best Answer: Scanpan Classic features bakelite handles that are welded rather than riveted to the pan. They are not induction compatible.Scanpan Pro IQ has riveted ergonomic stainless steel handles. It is induction compatible

Do the handles on the scanpan pro iq pans stay cool when using?

Best Answer: Yes they stay cool. We've only had the pan for a very short time, but so far we are totally happy with it. Another friend has had one for a couple of years and loves it.

Best Answer: Scanpan Pro IQ and CTX are both induction compatible. Scanpan Classic is not.

Are there lids for purchase for these pans?

Best Answer: It depends. For most of them, yes. I just bought the two pan combo and found lids for both. My prior experience is that I had one pan that I could not. I'd go with the staff's response, likely there are kids.

Which frys/cooks better? The pro IQ or the CTQ

Best Answer: Both would be very similar, but if one was to cook better, I would say it would be CTQ because it has a layer of stainless steel that Pro IQ does not.

On the stove top, can this pan tolerate high heat on my gas stove top?

Best Answer: The instructions say not to use high heat to use medium heat I also have a gas range,also oven up to 260 degrees Celsius or 500F.
