Microplanes are great products. I really like the 'hands on' approach to this zester as far as being able to hold it certain ways. In a time where a lot of people are taking shortcuts, this is a good tool for getting over the food with it and work with more of the basics. It is flexible which is nice, easy to clean, can be hung, and all you have to do is peal the plastic label right off the front of the plastic cover and you now have a nice guard and cover for your grater. I have seen more than one chef on tv use this exact one in a world of many graters with handles and such. You will not cut yourself holding it either. The grates are design to cut things that are being held against with pressure and being slid up and down
