Good Purchase to Streamline Process
Homemade ravioli is fantastic stuff, but making it is also pretty darn messy and labor-intensive.

Making ravioli is simple enough in theory. You lay a sheet of pasta on your work surface, add scoops of filling, and seal them in with another sheet of pasta. Cut the raviolis out with a chef knife or pizza slicer and you're done.

The problem with this method is that you often end up with odd-sized raviolis that are more pasta than filling. It can be hard to get a good seal between the layers when you're just pinching with your fingers, and it's frustrating when the raviolis break open during cooking.

Ravioli makers give us some insurance and add a level of quality-control to the whole process. The little wells mean that each ravioli gets just about the same amount of filling. The maker also helps you get more raviolis from your sheets of pasta, wasting less dough and giving us a better pasta-to-filling ratio. When you roll over the top with a rolling pin, the pockets are simultaneously sealed and cut apart. You get perfectly sized ravioli every time.

If you find yourself making a lot of ravioli to freeze or eat during the week, this ravioli maker would be a good purchase for streamlining your process. Highly recommended!

I'd like to use a cookie scoop to fill my ravioli - which number or volume size scoop should I use for this ravioli maker plate?

BEST ANSWER: The ravioli wells hold .75 oz. I would suggest using the .5 oz scoop, as it is the closest in capacity

BEST ANSWER: Once you have your sheets(slightly larger than the open squad plate) of pasta made, place a sheet over that plate with the legs. Almost like a table cloth?? Now take the other plate, the one that looks like half circle candy molds. Place it over your pasta table cloth so that it will make indentations down through the squar openings of the first plate. Do this slowly as to NOT tear the sheet of past, but stretch the sheet for you to fill with whatever goodness you're planning on. Remove second plate and fill indentations with your goodness. Now take a beaten egg (or water) and brush a second sheet. I find it easier and faster than trying to brush around the filled pockets. Place it egg washed side down over filled pockets and take a hard rolling pin over the pasta to seal and cut each squar of goodness into its own ravioli squar. You should roll just hard enough to see the framework of the first mold to cut through the pasta. Place in soft boiling salted water until cooked, remove to a pan/pot of your favorite sauce coat and serve or place in a dish top with any cheese you like and bake 375% until cheese melts and sights browns. You can use the broiler for this but don't walk away from this step unless you want to risk burning your works. It only take a short time with this step. Enjoy ??
Is this dishwasher safe?

BEST ANSWER: I never tried it as I don't have a dishwasher but if I did I would use it. I would just wipe it dry and would even go as far as using a hair dryer to get all the nooks and crannies dry before putting it away. Great product though.
