I know this is silly question but never having made ravioli before, I need to make two pastry sheets? One to fill and one to put on top?

BEST ANSWER: Not a silly question if you have never made them before. You are correct! Two sheets of pasta are needed. My step sons 81 year old Nonna (grandmother) straight from Italy visits us for several weeks over the Christmas holidays each year - I am a major rookie when it comes to pasta. I just watch in "awe"! LOL. I can give you a hint that I do, (well more like HAVE to do because I am a rookie!) which is on the "bottom" pasta sheet, I very slightly stamp the square just barely indenting the pasta so that I have a better reference point for my filling inside the square - do not overstuff them. Then I put my top sheet down, and gently press in between the rows then stamp away.
Did this seal the ravioli so the stuffing didn't come out while boiling?

BEST ANSWER: Yes it will if you use an egg wash between the pasta sheets before cutting.
