This knife works really well for all sorts of small things. The feel is exceptional and the blade stays nice and shape. The bigger knives (for me, at least) have more of a tenancy to chip, but this isn't a problem because of the small size. The things I cut with a small knife have left this blade is really good shape.
Always remember: when you buy a good knife, you should take good care of it. It will last a lifetime if you do
Well, that plan didn't work. I had been curious about these knives and admired them for a long time, but had hesitated because of the cost. I hadn't even gone into the store to hold the knife in my hand.
Recently there was a special purchase for the 8"" chef's knife and the 3.5"" paring knife. The offer was too good to pass up. This is one time the gamble paid off. I feel like I've hit the jackpot! The German knives which have been my friends for so many years will go to a good home and a new block full of Shun will move to their place. These knives are such a joy to use I made not one, but two pots of soup last night! I couldn't stop chopping. I can't wait to buy more, and I encourage anyone who is considering taking the leap to go for it. You will be glad you did. They are everything they claim to be and more. I went to bed tired, but oh so happy
