SpecialValueBuy This versatile kitchen essential is ideal for peeling, coring, trimming, decorating and other detail work. Generally, you’ll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves.

Shun Classic’s tasteful and contemporary design features a beautiful Damascus-clad blade and D-shaped ebony pakkawood handle. Behind the knife’s beauty is function: a razor-sharp blade offering precision performance.

Shun’s VG-MAX steel core—known for its incredible edge retention—is clad with Damascus stainless steel, then bead-blasted, revealing the woodgrain pattern of the steel that allows the blade to slide easily through food. The result is a knife that’s sharp, durable, and corrosion resistant, as well as beautiful to behold.

NSF-certified knife meets the high-level safety standards for professional kitchens. 3½" blade. Dishwasher safe, but hand washing is recommended. Limited lifetime warranty. Handcrafted in Seki City, Japan.

Free sharpening on all Shun cutlery for as long as you own it. Click for details

VG-MAX “SUPER STEEL” CORE The higher density of VG-MAX steel allows it to be tempered to a Rockwell hardness of 61 and still have the flexibility and strength to take and keep a perfect edge. VG-MAX’s natural tendency is to remain straight and true. When blade is used, the edge automatically straightens out and stays sharp longer.

METICULOUSLY CRAFTED Each Shun Classic knife is constructed using the kasumi method, a traditional Japanese process used to create samurai swords. Sixteen layers of SUS410 high-carbon stainless steel are pounded to 3/1000ths of an inch, then clad on each side of the VG-MAX core. This 32-layer forged construction gives the blade strength, stain resistance, incredible cutting performance, and an elegant Damascus pattern unique to each knife.

RAZOR-SHARP BLADE With a cutting edge ground to a 16° angle on each side, this is one of the sharpest knives you’ll ever find. Plus, the exotic Japanese steels used in the cutting core ensure that blade holds its ultra-sharp edge without the need for excessive re-sharpening.

USER-FRIENDLY DESIGN Comfortable D-shaped handle and perfectly balanced blade offer precise control and reduce fatigue during long, repetitive cutting tasks. Handle is made of moisture-resistant pakkawood—a fused blend of hardwood veneers and phenolic resin.

IDEAL FOR PRECISION PREP WORK This versatile kitchen essential is perfect for peeling, coring, trimming, decorating, and other detail work. Generally, you’ll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves.

Exceptional paring knife
I found the knife block had a few paring knives but none seemed to be that great. I'd sharpen them and it's work ok but I wasn't impressed. Having recently purchased a 5"" Shun, I knew exactly what to do.

This knife works really well for all sorts of small things. The feel is exceptional and the blade stays nice and shape. The bigger knives (for me, at least) have more of a tenancy to chip, but this isn't a problem because of the small size. The things I cut with a small knife have left this blade is really good shape.

Always remember: when you buy a good knife, you should take good care of it. It will last a lifetime if you do

Don't pass this one up.
When I arrived home last evening from a long and less than perfect day at work, I found that my new Shun knives had been delivered. I hadn't planned to cook, but the temptation to try out these new knives was too great. I told myself to just dice an onion and heat up left overs and relax.
Well, that plan didn't work. I had been curious about these knives and admired them for a long time, but had hesitated because of the cost. I hadn't even gone into the store to hold the knife in my hand.
Recently there was a special purchase for the 8"" chef's knife and the 3.5"" paring knife. The offer was too good to pass up. This is one time the gamble paid off. I feel like I've hit the jackpot! The German knives which have been my friends for so many years will go to a good home and a new block full of Shun will move to their place. These knives are such a joy to use I made not one, but two pots of soup last night! I couldn't stop chopping. I can't wait to buy more, and I encourage anyone who is considering taking the leap to go for it. You will be glad you did. They are everything they claim to be and more. I went to bed tired, but oh so happy
