Forged from a core of FC61 steel surrounded by 48 layers of stainless steel Damascus, Miyabi Kaizen II knives perform as good as they look. Sharpened using the traditional four-step Honbazuke technique, each knife is a hand-sharpened work of art.

tomatoes don't feel a thing
This is the kind of knife that makes you want to become a prep cook. Every morning I have to find an excuse not to turn everything in my fridge into a hash!

Very high quality knife
Super sharp, good grip, easy to use for slicing proteins and veges. This is my third Miyabi Kaisen knife. Take great care with cleaning and storing it to retain the edge. Use a good cutting board when you work it.

Beautifully made, razor sharp. Handle is well sized for a man's hand. The blade is thinner than the average chef's knife and therefore flexes somewhat so not for chopping chicken bones or hard winter squash.

Wow!!
I received this knife as a gift from my aunt. I raved about so much she got one for her husband and son.

I've never had a knife that didn't completely destroy soft produce before. This one is a first.

Tomatoes, kiwi, strawberries, peaches...everything slices like melted butter with this thing.

I received the 8". I may have go back for the 10" one as well.

One beautiful knife
I have bought a few knives over the years but this Is different .It's a very sharp knife out out of the box and really stays sharp. It fits in my hand beautifully and makes cutting a breeze. Do remember that a bad cutting board is abussive to a knife. The knife is craftive so well it does want you to take the extra care needed, making sure it's dried well and stored in an appropriate area

Knife is fantastic with vegetables especially when dicing. its a little light for heavier tasks. It came well-packaged but it took a little time to get here. Price was excellent.

I've had this knife just a short time, but has performed admirably. I have other laminated (damascus) knives, but this hold the edge far better. It's quite a bit more light weight than my other knife but is up to any task I put it to. This is my go to knife now. I would recommend this knife to any serious cook.

Love My Knife

I've been searching for the perfect chef's knife to invest in. I wanted one that could last me years both functionally and aesthetically (I have a habit of replacing perfectly good items for trendier versions). Miyabi knives have an exceptional reputation for their durability, sharpness, and precision, and I don't see how such an elegant design could get old. This knife was recommended by Sur La Table staff as an affordable alternative to the more expensive knives, whilst being incredibly sharp and versatile. The handle doesn't require any care, and the knife washes clean with mild soapy water. The blade holds its edge very well with only a honing steel to keep it razor sharp. For the price, this is perhaps the best knife on the market.

Is the spine rounded?

BEST ANSWER: This knife is a fine piece of craftsmanship, this knife as with any knife you care about should only be used on a natural wood or synthetic cutting board. Never use a glass cutting board or a tile, stone or metal counter top. I prefer both maple and bamboo.

BEST ANSWER: I'm pretty sure it's the method by which the knife is "hammered" repeatedly to get it to the fine edge it has. Perhaps they could have polished it or something but I think it's very distinctive and shows the artistry with wihich it is made.

BEST ANSWER: Generally speaking, wood is the best cutting board. It's gentle on knives and wood is naturally anti-microbial. The Miyabi knife is wicked sharp! And wicked sharp, means wicked fine edge, and that is relatively delicate.,you want to use it on a relatively soft surface like wood. Just take good care of your wood cutting board, periodically treating it with block oil and it will serve you faithfully and healthfully for a lifetime.

BEST ANSWER: No. MIYABI packaging includes much caveat and advice regarding use and care, so if there were a warranty you likely would void it the moment you failed to use the recommended cutting board -- "MIYABI cutting boards made of hinoki wood." Wipe clean after each use. Do not place in dishwasher. Only sharpen with "professional tools."
