"performs well, not meant for flat electric ranges"
The pan works very well. However, if you like to make gravy by taking the pan from the oven straight to the burner, this will only work for gas and electric coil ranges (where the coils are raised above the range surface). The base is concave, meaning there's a slight dome if you're looking at the inside. Therefore, if you have one of those flat glass electric ranges, the majority of the bottom will never come in direct contact with the heat

Money well spent
Like all of the All-Clad line, this pan is an investment in a great cooking tool. If you are serious about cooking, you know the importance of working with quality tools. You pay more initially, but these are pans that you can use and hand down to your children. My only regret is that I didn't purchase All-Clad years ago. We roasted our Thanksgiving turkey and made gravy in this pan and it was wonderful. Highly recommend

Better than the usual turkey pans
This larger baking pan was what I needed but then the insert limited the size of roast or fowl I could cook in it. Clean up, when you use it aggressively, needs a bit more than soap and water. I encourage you to purchase the Bar Keep cleanser for a beautiful shine

A Must Have For Cooks
I received a cheaper roaster for christmas one year and the roaster was ok but it hasn't stood the test of time. I purchased an all clad roaster and use it several times a year for roasting vegetables, turkey, roast beef, and making gravy on my stove top. Clean up is a breeze a little soap and water and done

I made the mistake of buying this pan about 8 years ago. We have a very nice and useful set of All-Clad pots and pans, so how could their large roaster not be good?

Well, the answer is (after corroborating with their customer service people), somehow, it IS BAD.

It does a consistently POOR job of cooking any large piece of meat...turkey is what I usually cooked in this pan, and EVERY turkey I've cooked in here has been done on top...and a bloody mess below the pan line. I've used it with the flat rack they used to supply with it, and with a V-rack we have at home...same results. This year, I tried cooking the bird upside down, with the breast at the bottom, flipping it for the last hour of cooking. The result? Uncooked turkey on top AND bottom.

If it was just one year, I'd chalk it up to a faulty oven temp, or too many manhattans while cooking, or some other user error.

IF my wife wasn't a food professional who does a lot of baking work in our kitchen for jobs, and makes very sure that the oven (a Viking) is level and calibrated properly, I might say that the oven is out of whack.

BUT EVERY TURKEY I've cooked in it for the past 5 6 years? Sorry, something's wrong with the pan. I'm getting rid of it (dumping it on eBay for whatever I can get), and purchasing a pan locally.

Made my first roast New Years Day
Skipped the turkey and made a standing rib roast. Have been wanting a pan like this for a very long time. Beautiful pan, very well made, and worth every penny. I love the way the rack sits so close to the bottom. It is indeed heavy, but it's stainless. The handles give a very good grip on it. Clean-up was easy. This is the second piece of All-Clad that I own. I love these pots & pans!

Great Roasting Pan
We purchased this pan just before Christmas. We used it to roast potatoes in it. I think a more shallow pan is best for potatoes done this way if you want crispy on the outside. I used Yukons and will try Russet next time. Looking forward to using it for meat or veggies.
