For cakes - It depends on what you are doing and the size of you hands. I have offset and flat. I use offset most, because the blade a bit more “nimble” in terms of covering hard to reach areas without your hand getting in way. I have small hands, so I have a 4 to 5 inch and another that is maybe 7 inches. I think one of the local college instructors has students get a 7 or 8.
I don't have any with the narrowing tip, but it would be good for placing flowers on a cake.
If you are frosting a large cake, the flat can be nice for the cake top, to smoothly applying frosting to large, flat surface areas. Tip: Dip in hot water, dry, and go across cake to get a smoother look.
