Shun Classic Hollow–Edge Chef’s Knife, 8"
With its curved belly, this chef’s knife can be gently rocked through fresh herbs or spices to produce a very fine mince. A thinner blade makes it lighter and less tiring to use than comparable European-style chef’s knives. Plus, oval indentions on the sides of blade reduce friction, ensuring clean, uniform cuts with minimal sticking.

and pleased with all products
Veggies still do stick to the side of this knife even though it's hollow-edge. But other than that, it is a truly great knife. I don't think I would pay extra for the hollow-edge, though.
I wouldn't get this as your first good knife, though. It can be a bit to handle would recommend getting something closer to 5"" or 6"" since those navigate quickly through whatever you are cutting
