Like fine wine, a cast iron skillet can only get better with age. My husband carefully oils my skillet all the time to maintain the richness it absorbs from all the roasting, braising and even baking I do from this one pan. I have the 12' skillet, small enough to cook comfortably for two and big enough to stretch to feed an army.

Cast iron retains the heat well and keeps the temperature very consistent throughout. Great to start off on the stove and finish in an oven with fear of destroying the skillet. I can start a stew on the stove, pile some biscuit dough on top and pop it in the oven to bake - and VOILA - ready for the dinner time before you know it. In my opinion, a cast iron skillet is the best way to cook thicker cuts of meat

So many to choose from
I LOVE to cook and can say my husband taught me much including my love for cast iron. NOT just ANY cast iron though. We have read, looked at, tried, and read more and find that the LODGE LOGIC brand is the BEST cast iron. It provides even heating with no hotsport and is the best for pancakes or grilled cheese. If you don't believe me that there is a difference get your own Logic (even a small one for sandwiches) and give it a try for yourself. WAY TO GO LOGIC

"Great value, bulletproof construction."
I've had the 10"" skillet for a few years now and it has become my go-to pan. I've seasoned it well enough where I can make pancakes or fry eggs without a problem. It is quite heavy though and not for people who like to wrist-flip their ingredients

My go-to skillet!
I fell in love with my 10'' cast iron skillet! I use it for everything (except acidic foods, of course), my favorite thing is how easy things like cornbread pop right out! My only complaint is how heavy it is, but that's just the nature of cast iron. Great value for a great product

great skillet
My 20 yr old ""other brand"" 12 in skillet cracked, so I replaced it with a Lodge. My 9 in Lodge is even older, and still going strong. The 6 mo that I had no 12 in made me crazy, so I am happy to have one again. It heats and browns so well, some things are only cooked well in an iron skillet

Great Product
My boyfriend makes me pancakes every saturday morning in the 12 inch pan. It cooks very evenly and hold its heat making numerous pancakes.

The best
We own two of these, in two different sizes. They are fantastic. The more the use them the better they get. They go in the oven, on the stovetop, even on the grill. Best caramelized onions of your life! Irish soda bread! Meats and fish! Incredible vegetables! Versatile and will last more than a lifetime!

Great skillet
My only concern is my glass-top range and scratching/cracking with this rather heavy pan. But that is not a function of or problem with the skillet itself. I just gotta get a gas range. (Hate electric.) So far, so good.

BEST ANSWER: A great way to clean your cast iron without the harmful chemicals that may strip it of it's seasoning is a combination of salt and lemon. Cut a lemon and half and scrub some coarse sea salt into the surface using the fleshy inside of the lemon.

Can cast iron be used on an electric glass top range?

I've read that cast iron can crack a glass top range. Answers I've seen regarding the topic are all over the board. Some say yes, others say they don't have any trouble. Then there is talk about enamel vs non-enamel and the enamel melting. And other talk about if the pan is bigger than the heating surface. It has me all confused. I'm wondering if it is due to people just not being careful and placing it down too hard on the glass top. Or does it have something to do with cast iron holding so much heat and a difference in temperatures. Can someone explain it clearly please

BEST ANSWER: I have a smooth top range and use 8"" and 10"" cast iron skillets on it with no problems. I am careful not to drop the skillet or bang it on the stove top. It might depend on the brand of stove too. Mine is a 15 year old Magic Chef

BEST ANSWER: Best go to the Lodge website and see their instructions for care and refurbishing. Use solid Crisco to season or re-season, not a liquid oil, and never use a cooking spray. Note that extra virgin olive oil is mono-unsaturated, which presents its own characteristics, and any olive oil has too low a smoke point to be suitable for seasoning.

BEST ANSWER: Yes, the cast iron skillets are pre seasoned, but for first few uses you need to use a bit more oil or butter. Then it gets better. Really good instructions will pans.
I've never owned a cast iron skillet. How easy are they to clean? Does food wipe right off, or will I need to scrub?

BEST ANSWER: Often food will wipe out, or you can boil water, dump out and wipe with a little oil. But for harder to remove food there are bamboo scrapers, like you use for a wok, or no-scratch plastic srubbies (like ScrubDaddy) that are safe for the iron's patina.
After washing, when drying it with a paper towel the towel is slightly black - does this mean it is still dirty? It is a new pan, is that something that should be expected?

BEST ANSWER: Cynthia, yes it is normal. I've owned my pan for over a year, and it has taken me quite a while to get used to it. BTW, so far best cleaning method is kosher salt and a slightly damp paper towel. Then wash it in hot water, no soap needed, but if you must, make sure it's a minimal amount of mild dish soap. Rinse and dry thoroughly. Rub down the pan thoroughly and evenly with a tiny amount of bacon grease, put in hot oven for an hour, let cool. I recommend keeping a tiny jar of bacon grease in the back of your fridge specifically for this purpose. (vegetable oil is not the way to go here). There are a number of good websites to explain the various methods of cleaning and seasoning a cast iron pan. Do your research.

BEST ANSWER: This recipe was actually an adaptation of the blueberry cornbread recipe located at we just substituted the blueberries for the peaches.

BEST ANSWER: Yep! We use our cast iron pan to fry eggs just about everyday - and as long as you have a touch of oil in the pan, it's one of the easiest pans to use (and tastes soooooo good -- way better than any other pan we've used). Scrambled eggs can leave behind a little more mess, but we find a 3-5 minute soak in just plain old water usually breaks it all loose.

BEST ANSWER: You will need to account for a small adjustment for the slower response of an electric stove, however the cast iron is going to hold the heat anyway and you probably wouldn't be using it for anything where it's important to make quick changes in heat. An electric burner is going to react significantly more slowly to turning the heat up or down. It's something you will need to adjust to with all your cookware, cast iron or otherwise. It certainly wouldn't do for anything that requires quick reaction to heat changes
