Baked Eggs!
Purchased 6 of these for crème brulee but discovered they are fantastic for baked eggs! 2 eggs per dish, plus a little butter, cream and herbs. Served with crispy grilled Italian toast to dip in the yolks is excellent. The shallow depth cooks the whites quickly and leaves the yolks just perfect if you watch them closely.

How did I ever live without these?
Mainly I use them for two purposes...(1) fresh basil, 2 eggs, a bit of evaporated milk and coarse grind pepper in 350 oven for 10 minutes and voila, you have shirred eggs (2) I get spinach mozzarella patties at Whole Foods...break one up and top with marinara, aribbiata, or puttanesca sauce and shaved parmesan..bake in 350 oven 30 minutes. Yum.

Perfect for breaking up spinach mozarella "cakes" from the deli counter at Whole Foods. Top with a little arrabiatta sauce and some asiago cheese shavings. Pop in 325 degree oven for 15 minutes. Delish and filling. Will work for baked eggs/2 to a ramekin with butter, cream, herbs and bits of crispy bacon. Perfect shape for even baking...not too deep. Go well with my blue and white pottery dishes.

Would these work for individual steak pies? Is the rim wide enough to attach pastry?

BEST ANSWER: The rim is very thin and would not be sufficient to hold pastry. I bought the 10 oz round ramekins for pot pies etc. since the have an inner edge below the rim that is suitable for pastry toppings. The ovals are very good for au gratins and work well with crumbled toppings. They are shallower and have a larger surface area so for dishes that you want a crispy brown top they are great.

I just bought these 6 oz porcelain oval ramekins. I was planning on using them in the oven to prepare creme brulee. Are they oven safe?
