"My new ""go to"" pot"
The Flame Top by Emily Henry is just fantastic, I love the versatility of freezer, oven, stove-top, microwave and dishwasher. Throw in how well it browns, braises and cleans up, I've been using it for just about everything from Maque Choix to Smothered Chicken to Clam Chowder.

Usually to do these things I need to pull down one of my heavy cast-iron pots, but this is so much lighter even my wife will use it. Couldn't be happier with the performance of the burgandy clay

What is the difference between the cassoulet pots and the stew pots?

Best Answer: Cassoulet is a hearty French bean stew made with white beans and sausages, along with pork, lamb or other meat. A traditional peasant dish, cassoulet is customarily baked in an earthenware dish (Cassoulet Pot) for two hours or longer. A cassoulet pot is non-reactive and emits a far-infrared heat which is most effective and allows a full range of subtle flavors to emerge. It is excellent for lengthy simmering and baking such as is required with a cassoulet. A Stew pot serves the same purpose as a cassoulet pot in that it is used to slow cook, or stew, a variety of meats, beans, vegetables and seasonings, but it is generally enameled cookware
