Santoku means “three virtues” in Japanese, and this knife gets its name for the three strengths it demonstrates in the kitchen: cutting vegetables, thin-boned meats, and fish. Many cooks reach for their santoku at least as often as their chef’s knife.

This santoku’s slightly curved blade enables you to employ a rocking motion while cutting. A thinner blade makes it lighter and less tiring to use than comparable European–style knives. Plus, oval indentions on the sides of blade reduce friction, ensuring clean, uniform cuts with minimal sticking.

Shun Classic’s tasteful and contemporary design features a beautiful Damascus-clad blade and D-shaped ebony pakkawood handle. Behind the knife’s beauty is function: a razor-sharp blade offering precision performance.

Shun’s VG-MAX steel core—known for its incredible edge retention—is clad with Damascus stainless steel, then bead-blasted, revealing the woodgrain pattern of the steel, which allows the blade to slide easily through food. The result is a knife that’s sharp, durable, and corrosion resistant, as well as beautiful to behold.

VG-MAX “SUPER STEEL” CORE The higher density of VG-MAX steel allows it to be tempered to a Rockwell hardness of 61 and still have the flexibility and strength to take and keep a perfect edge. VG-MAX’s natural tendency is to remain straight and true. When blade is used, the edge automatically straightens out and stays sharp longer.

METICULOUSLY CRAFTED Each Shun Classic knife is constructed using the kasumi method, a traditional Japanese process used to create samurai swords. Sixteen layers of SUS410 high-carbon stainless steel are pounded to 3/1000ths of an inch, then clad on each side of the VG10 core. This 32-layer forged construction gives the blade strength, stain resistance, incredible cutting performance, and an elegant Damascus pattern unique to each knife.

RAZOR-SHARP BLADE With a cutting edge ground to a 16° angle on each side, this is one of the sharpest knives you’ll ever find. Plus, the exotic Japanese steels used in the cutting core ensure that blade holds its ultra-sharp edge without the need for excessive re-sharpening.

USER-FRIENDLY DESIGN Comfortable D-shaped handle and perfectly balanced blade offer precise control and reduce fatigue during long, repetitive cutting tasks. Handle is made of moisture–resistant pakkawood–a fused blend of hardwood veneers and phenolic resin.

Culinary
Shun crafts masterpieces of both art and culinary weaponry. The Shun Classic Santoku blades are far above the competition in comfort and durability, likability, and asthetics.
I can't wait to come home from the farmer's market, with my fennel, carrots or fresh herbs, and chop them up. Often I cook for the mere pleasure I experience in weilding my new knives.
Though I have had them a while, they will always be new to me because all other santoku blades are behind me

WOW!
FINALLY! a knife that is as sharp as a good cook needs a knife to be. have been disappointed by previous knife purchases so many times, i can no longer count. even after sharpening them myself or using professionals to do the job, they are not nearly as sharp and effective as my new SHUN knife. chopping and slicing are now so easy because of this knife that my skills are improving and the look of the food items i am slicing and chopping is better, too. be careful, though...it's SHARP and must be handled and stored carefully
