There's really only one way to cook authentic, family-style paella, and that's in a large, carbon steel pan. The wide, flat cooking surface and shallow sides encourage the formation of soccarat, the delicious caramelized crust for which paella is justifiably famous. Used for centuries in Spain, the paella pan distributes heat evenly and becomes naturally seasoned with use. Safe for the oven, stovetop or outdoor grill. Note: pans over 18" won’t fit on a standard stovetop.

seasoning
This pan will rust if it is not seasoned by rubbing some oil into it while it is hot after using it and before storing it. Treat it like a cast iron pan and this will last a long time. When mine rusted I was able to rub the rust away with kosher salt. I've kept it in my pantry ever since with a thin layer of oil on it.

with a 22'' eat more than 20
I just bought the 22"" paella pan to cook a paella for my friends. As they where 24 people, I cooked another 15"" paella. I can say that with some appetizers before the paella, they all ate with the 22"". Definetly, the 22"" is a good size for a big party

Paella and sangria party!
I have several of these in different sizes, and they cook just like the authentic paella pans in Spain...yes, you dry and oil them lightly, easy to do...The key thing that works so well is the heat distribution across the whole surface. I've used them on stovetop, and BBQ grill with equal success. I highly recommend, as you then bring the whole beautiful pan to the table to get ""oooo-aaahhhhh"" from your guests! Paella parties and sangria are now the summer tradition at our house

Nice Sized Pan
I received a free CharBroil paella burner for a review, (they call it their Multi-Cooker). It came with a small 16"" pan, but in order to use the second ring I needed a larger pan to test it with. The 22"" pan fits perfectly, and easily fed a crowd an authentic Valencian paella made with Judion Beans and Bomba rice. The next outdoor cook using this big pan was a Spanish chorizo and seafood paella! Indulged with the porrons, and everyone was happy! This pan is the real-deal, and made of steel that must be seasoned after each use, just like good cast iron cookware. Mine lives the the garage, hanging on the wall! It will last for generations if properly cared for. Now you don't have to ship one back during your next visit to Pamplona, just go buy it at Sur La Table

"Great pan, does what it needs to do!"
Relatives got me the 13.5"" version of this pan as a gift and I have used it about 4 times now. I have a small stovetop and this pan can fit over two burners. Mainly I have used it at the park on public bbqs, which do not have a large cook surface. The pan cooks paella like it should. As stated in the description, this pan is not non-stick and should be treated more like a cast iron pan. It will rust if you do not dry right after cleaning or you live in high humidity. I live in a low humidity place, so I can just dry it off and toss it in the cabinet and not worry. Rust easily comes off with a bit of salt, oil, and elbow grease..

Very well made of traditional material
I recently made 1 bag (1 Kilogram) of Calasparra Rice (not Bomba) in the 22 inch paella pan along with chicken, sausage, shrimp, clams, mussels, and lobster for 10 guests. The ingredients filled the pan to the rim. Half that amount of rice would have been the proper amount for that size pan. Only half the paella was consumed. Twenty would probably have been just the right number of people for 1 kilogram of rice.
The pan worked great even though I overloaded it.
Being very well made I would definitely recommend it.
It will rust if not cared for properly. Read the instructions and follow them, the pan will last a lifetime. If you do not want to do the work buy stainless steel.

Rusts if care instructions aren't followed
I, too, experienced the same problem another user mentioned and had my pan rust after the first use. My pan came as a gift and no care instructions were given so I washed and dried as normal and then experienced quite a bit of rust after. As others mention, the rust comes off with some work, but storing with a film of oil, wrapped in paper is simply not convenient or practical for me. I also had problems with food sticking to the bottom in spite of generous use of oil while cooking.

I would not recommend this product if you don't have the space to store it properly

Rusting
This pan rust way too easily, even after following care instructions of hand wash, immediately drying, coating with oil and covering. I will be returning the product.

not worth even half the price
This pan had more hot spots than any other pan I have had ever had. I had to keep moving the pan to keep the cooking temperatures relatively even. After the second use I threw it into the recycle bin

I have two smaller paella pans made of carbon steel and have had great success with them. However, we are having 12 guest for dinner and needed the larger size. 22 inches is the correct size for 7 to 12 servings according to a couple websites selling authentic paella pans. The carbon steel is the traditional material, it works perfect for developing the socarrat. With proper care, it must be oiled after each use, it will last a life time.

You can spend $300 for a triply stainless or enameled cast iron paella pan, but's that not what they use in Spain. They use these simple thin carbon steel pans instead over gas, wood or charcoal. Part of the fun for me is using authentic tools and methods to create authentic tastes. That's why I use a round bottom carbon steel wok over an extra high powered gas burner, too.

I don't see that it does from the description ,however not sure how you make paella without a tight fitting lid

BEST ANSWER: Here is some information I found on hotpaella.com:Serving SizeOne serving is an approximation based on about 1 1/2 cups of cooked paella per serving if you fill the pan up about 3/4 of the way. This would be an average serving, for a larger entree size portion, you'll want to estimate 1-2 servings per guest.Filling the pan to the top when cooking will allow for a few more servings, but traditionally paella is cooked in a thin (and crispy) layer at the bottom of the pan. Be sure there is enough room for the rice to expand, this will ensure all of the other ingredients cook evenly without overflowing
Can the paella pan be used on an induction cook top?

BEST ANSWER: I just bought this as a gift and it IS magnetic and it heats up beautifully on my induction stove top!Apparently (according to the physics forum) there are two crystals in steel, one is magnetic and the other is not. So it depends upon the amount of magnetic steel in the mix. The 400 series stainless steel (martinsetic, e.g., 440C stainless) is generally magnetic, while the 300 series (austinetic, e.g., 304 and 316) is not

BEST ANSWER: Depends, the burner size is key. For the paella to cook properly the entire bottom surface of the pan needs to have continual contact with heat. I purchased the large pan and it is too wide for my glass top burners. I prepared paella the traditional way....outdoors on a grill. which allowed the bottom of the paella to cook evenly. There is a great Alton Brown Good Eats video of how to. Best of luck!

BEST ANSWER: Wash the pan and dry it thoroughly. Do not let it air dry. EVER! Wipe it down very lightly with a little vegetable oil. That's all you have to do. Same thing after use.

Paella Pan Care Instructions

For Traditional Polished Steel and Pata Negra Pans

Before First Use - To help remove the label, warm the bottom of the pan slightly, then peel the label off. Next, boil several cups of water in the pan to help remove the clear protective finish. Follow this by washing the pan by hand with soap and water, and then immediately dry. Finally, rub a small amount of vegetable oil on the pan to prevent rust.

Never store a pan when wet and never allow it to air dry; drying it immediately will help prevent rust.
Polished steel pans are not dishwasher safe, and are not recommended for electric cook tops.
Always oil a pan before storage to prevent rust.
Discoloration (turning blue-black) is normal and is an indication that your pan is ‘seasoned’ and has been properly cared for.
If your pan does rust, simply clean off the rust with a scouring pad or light sandpaper, then re-oil.

BEST ANSWER: Most paella pans are not stainless steel. If it is a stainless steel pan just treat it like any other quality pan or pot. Use a good degreaser detergent, scrub and rinse it. Period. Ready to go!

However, if it is NOT stainless, clean it the way you would a typical cast iron food residue.pan. Very limited soap, very gentle scrubbing. Use kosher salt and a sponge to remove any sticking food residue. Dry completely with a paper towel and apply a thin coat of any cooking oil to protect the surface and inhibit rusting/corrosion. NOTE: BEST paella pans are NOT stainless.
