Description

SPECIAL VALUE Shun’s efficient boning/fillet knife is equally adept at two key kitchen chores. The thin, sharp, curved blade makes it easy to separate meat from bone—even fibrous tissue is no match for the extremely sharp edge. The 6" length is perfect for filleting fish and blade has the right degree of flexibility to glide through the body of the fish, quickly removing bones and skin.

Shun Classic’s tasteful and contemporary design features a beautiful Damascus-clad blade and D-shaped ebony pakkawood handle. Behind the knife’s beauty is function: a razor-sharp blade offering precision performance.

Shun Classic knives feature a core of proprietary VG-MAX super steel clad on both sides with 34 layers of Damascus stainless steel. The woodgrain pattern of the steel allows the blade to slide easily through food. The result is a knife that’s sharp, durable and corrosion resistant, as well as beautiful to behold.

NSF-certified knife meets the high-level safety standards for professional kitchens.

Shun fillet knife
First off, let me start by saying how much I love Shun knives. I am impressed with their quality and durability. Perhaps some of the best knives that I have worked with and thats saying a lot. I bought the fillet knife for all the whole fish that I buy and therefore need to remove the bones. As expected it is sharp and cuts through the skin and bones well. However, most filleting knives are flexible to help with the filleting process. The shun knife is not flexible. I would actually give it a 3.5 but thats not an option

I have the classic 8 piece shun knife set. It is one of the best knife sets I have ever used and will no longer buy any other brand. Needed a boning knife for fish fillets and did not need to bother looking at other brands because I trust this brand so much

I was looking for a good knife to fillet large whole Salmon and other fish. So far I am very satisfied with it. It does a great job; I just need more practice to get the perfect fillets.

I saw this question for another knife, please answer for this particular knif

The flexibility of a fillet knife is very important to me. To easily fillet the skin off the fish properly, the blade must be able to somewhat flex so that the blade is fully flush to the table otherwise it can be hard to start the fillet or to properly fillet the meat off without wasting meat. Another very important aspect of the knife is the tip, how well it holds an edge and can pierce for starting the cut along the backbone. I'd love to see a case for the knife available if there is one. A fillet knife should not have the rigidity of a boning knife, otherwise no matter how well it holds an edge it is poorly designed
A shopper on Mar 26, 2014
BEST ANSWER: If flexibility is important for you, I wouldn't suggest the Shun knife. We tested the Zwilling and the Shun side by side and could tell a significant difference in their ability to bend. The Shun knife's upward curve and wider blade make it next to impossible flex it flush with the table. I definitely still stand by the Zwilling knife
