I may never go back to making that large cheesecake again. This makes the cutest individual perfect size servings. AND it's so simple to remove the cheesecake. I wash mine by hand, keep the little removable discs in a zip lock bag and put the entire thing back into the box so storage is a breeze and I know right where the discs are.

OH MY GOODNESS!!!! I will never look at baking a huge cheesecake ever again. I just got finished making 72 little chocolate truffle and new york style cheesecakes. This makes it sooo fast and easy!!! Cut parchment strips to line the inside, makes getting them out very easy and you don't run the risk of scratching with a plastic knife. My husband is already eyeing them for doing small round bread loaves and cakes. He is even going to do small meatloaves. This is soooo great!!! I bought 2. I may actually buy a couple more. I hesitated to buy another pan too. But there are so many recipes out there for mini cheesecakes! And it really works much better for parties so serve individual pieces than having to cut and serve. I was very pleased with how easy the cheesecakes released. I didn't even have to loosen them with a knife. Just pushed the disc up and they came out beautifully. Really glad I bought it.

I researched optional mini cheesecake pans and this metal one was highly recommended and I am very happy with mine. I used a favorite recipe of mine and just filled the cups 2/3 full and I have many mini cheesecakes that were very easy to remove and store. They freeze beautifully so I expect to have frozen cheese cakes ready for at any time. Thank you for this pan.
I'm torn on this one, if I hadn't purchased it 6 months ago and used it several times I would probably be returning it. I like the idea a lot and the implementation is not bad, but I'm not positive that it's worth having yet another pan that does yet another special thing. My kitchen is not so large that storage is unlimited. One issue is that the little discs have started to have a minor amount of oxidation...I was not expecting this at all as I have taken extremely good care of it always hand washing it and air drying it after each use. It would be 10 times better if it nested even just with the same kind of pan. There is nothing that fits well within it and it doesn't stack at all so it is a space hog. Cupcake pans which are the alternative do nest very well. It is easy to adapt cheesecake recipes for it...basically make enough for one cheesecake and fill it up, you might have leftover. I typically double the 9-10"" spring form recipes and fill my 2 8"" pans and all the little ones as well
I was actually looking for square pans, but I think this would work out better. For presentation and can now use "cup cake" holders wherein presentation for the square cheesecakes was previously a dilemma.

This product does have a removeable bottom for easier release and you can use cupcake liners in it if you wish.
Yes, each section has a small round removable disc. After baking, you just press on the underside and lift upward and it brings the cheesecake up and out of the pan. There would be no purpose to using cupcake liners with this. The removable discs are designed to lift the cheesecake without using a springform pan. I just listed a photo, check it out
The bottoms are disks that push up and out making the removal of your baked good easy. I don't see a reason that you could not use cupcake liners--it still acts like a cupcake pan. I would suggest cutting parchment strips to line the inside so you do not scratch it with a plastic knife while releasing the sides.
The bottoms come out perfectly, but cupcake liners are not going to be quite the right fit. These are vertical rather than sloped sides. They can work, but you'll get some funny folds.I'd recommend just buttering the bottoms and sides or if you must cutting parchment paper to fit
Yes, the bottoms come out and the cheesecakes release nicely. I don't know if there are cupcake liners for this size. They're bigger than a mini muffin pan, but smaller than regular muffin. Besides, they're not necessary
I want to use for mini key lime pies with a GF crust. Should I line with parchment or will the pie custard remove cleanly?

Best Answer:I don't really know that much about how your GF crust would release from the this pan, so perhaps the parchment wouldn't hurt, just to be safe. I've only used this pan for a traditional graham crust and the release was perfect, I love this pan! In fact, I recently purchased a second one so that I could make a bigger/double recipe as a time saver. I hope that this helps you. Enjoy!
I would just spray the bottom and sides with some no stick cooking spray, that would be much quicker and easier than using parchment. Because this pan has removable bottoms, it generally allows stuff to come out pretty cleanly once you have run a knife around the edges, but just to be on the safe side I would use the cooking spray. Good luck with the key lime pies.
I imagine it would be pretty difficult to line with parchment, as the cavities are so small. I have seen it suggested that you run a knife around the edge of the cheesecakes as soon as they come out of the oven because it minimizes the damage to the top & the crust when you remove them. Perhaps this tip would work for your pies, too?
I have found that putting pan in freezer for 30 minutes to really firm up the filling is best way for a clean release from pan. Not sure parchment would be good it will be really difficult to get into pan wells without impacting volume of contents
Best Answer:Absolutely, I baked mini brownies in this pan and had no "leakage" at all, and it was a pretty "loose" (runny) batter. Make sure you put the bottoms in then spray the bottom and sides of the pan well. This is a perfect pan for "Mini" cakes like carrot cake, yellow cake, red velvet etc., it's not just a cheesecake pan. I love it and will be ordering more. Bake on!!!
