This gel dye works beautifully - I was making cupcakes for a Ravens playoff game and the icing turned out the perfect shade of purple (it does darken a bit as it sets) - however, the gel imparted a rather bitter taste to the otherwise sweet cream cheese icing, which was quite disappointing. I think in the future I will mix my own purple by using the no-taste red and blue
