I had my Wusthof 6"" chef's knife that long and it was time for a new one. I decided to move up to an 8"" and I love it! Do a lot of food prep and this handles so well, not heavy in the hand so easy to use

It's Wonderful to Have a Good Go-To Knife
This knife is just the perfect size for slicing, dicing, mincing and chopping. It is my go-to knife. Holds an edge well. The handle is easy to grip, it is light weight and the curve allows for faster food cutting. I really realize how much I love it when I go to a friend's house and have to use their cutlery. Yuk! I also have the Wusthof knife sharpener and, although I have not had to use it on this knife, I use it on my other knives with fairly good results

Great Knife with Long Life
I've been using this knife for a few years now, and it still slices through the trickiest of fruits and veggies (tomato, onions, etc) with ease after a proper sharpening

Why did you choose this?
Sur La Table Store
I wanted a smaller chef's knife. Love the knife. Very well balanced. It's my go to knife when cutting vegetables, mincing garlic, etc. Can't go wrong.

What is its Rockwell number?
Chris M on Jun 18, 2015
Best Answer: You would have to ask either Sur la Table who could probably get the number or Wusthof company. It is a high-carbon. Steel manufactured in Germany. Or, you could peruse an answer by searching the Internet by entering "Rockwell number for knives" in a search engine.
