SPECIAL VALUE This cookware set features an InductoSeal® base that combines silver and a 2mm disc of copper hermetically sealed in an 18/10 stainless steel TriplInduc® base that’s laser-welded to the pan.

The combining of these two unique technologies ensures optimal heat distribution throughout the entire base, and provides a heat-conducting surface 33% larger than traditional pans. Heat, aroma and steam stay inside pan during cooking, as well.

Also features satin-polish Silvinox® finish and stainless steel Coolcast® handles.

Demeyere makes cooking sexy
I purchased this cook set 6 months ago, and while the initial sticker shock took my breath away - Demeyere has proven that you get what you pay for. I have dabbled in other stainless cookware and some non-stick, but none have been as wonderful as this set. The only drawback of this set is the lack of the glass lid option.

These pans heat very quickly and retain their heat evenly. The sides get hot (as the above person mentioned), but if you know what you are doing in the kitchen - you shouldn't have an issue with burning your food.

I plan on expanding my Demeyere set and I recommend it to all my avid cooking friends

Best. Pans. Ever.
I did months of research online before deciding what set of pans I wanted to buy. After all, at my age, this is the last set I'll ever buy. I ended up with Demeyere Atlantis and I couldn't be happier. I knew they would heat evenly and last forever but I was concerned about clean up. All I've ever owned are non-stick pans. I was pleasantly surprised at how easy they are to take care of and clean. For even for the most baked on food, all it takes is a dash of Barkeeper's Friend and it's sparkling again. They are pricey, but you get what you pay for...you cannot go wrong with these pans!

Atlantis
I purchased this set as a gift for my wife and myself. To state that we absolutely love them would be an understatement. beautiful to look at, but first and foremost, fabulous cookware. We'll be replacing the balance of our kitchen cookware with Atlantis wherever possible

These are amazing...
Some would say they ought to be given the price, but after three weeks of intensive cooking my impression is they are worth every penny. They heat evenly and quickly (I used gas exclusively), and clean up quite easily with bar keepers. They are heavy, but oh so solidly designed and built. I want a second set now for my other residence...

For the price, there are several other options. I dont' find the heat to be even, especially up t he sides of the sauce pans. If you are making or heating anything you can expect the sides of the pan to be extra hot and burn the food to the sides. The bottom of the pan may heat evenly, but overall this a poor value. The pans are also VERY heavy and the lids are not glass and do not allow you to see the food . The size of the pans is off just enough, that you can't use the lid from any other pan either. They do not offer a glass lid option

Is the copper portion in the Atlantis set limited solely to the bottom of the pans or does the copper extend fully up the sides?

Whether or not the copper goes all the way up the sides or not depends on what the pan is designed to do. One of the things that Demeyer is known for is that they design each pan for its specific purpose both in design (engineering) and materials. A saucepan that relies on a nice even heat all over would have the copper going all the way up the side of the pan so that your delicate sauces cook evenly even against the side of the pan. On the other hand a saute pan would only have the copper core on the bottom of the pan because it is not necessary to have such a quick reaction to temperature change up the sides of this pan. Best Answer: 18/10 - I cook a lot because it's what I love to do!!! The best set of pots and pans! I have owned every pro-set and basic pots. I cleaned out every cabinet and filled with ONLY Demeyere! Best investment ever! I hope this helps.

I can't tell from the pictures -- is the outside a shiny polished metal or more stain brushed metal? (And is the interior the same or different?)
