Home knife
I use my 8' Global daily at work, but when I cook at home and for friends, this is what I reach for. I wouldn't trust the dishwashers with the high-carbon steel, nor do I have time to wash and oil it myself during a service period, but I love the traditional Euro-style handle and French blade profile. I do prefer the European style knives, and I think this is a great knife, and far more affordable than most of the Asian-style blades or German steels. Just keep in mind this will develop a patina because of the high-carbon, whether you oil it or not, but it is worth having
