Our friend, an Italian chef, said this was the best for risotto and is what he uses at his home at Lake Garda, Italy! Excellent quality. Cooks up perfectly. Also great to use leftover risotto for aroncini.

How much water do I use?

BEST ANSWER: Well, you don't use water! You use chicken broth. The Knorr cubes are excellent. Make a pot of about 6-8 cups of water, dissolving 3-4 double cubes in it (or single cubes, as needed for your water). Keep this broth almost at boiling while you are cooking the risotto. Ladle about 1 cup at a time into the rice, stirring occasionally, simmering the rice. You may use all of the broth - or not - depending on how the rice absorbs the broth. It will probably take you about 40-45 minutes to cook it nicely. Even though this sounds like a lot of work, it is so, so much better than our average white rice. Check on some risotto recipes. My Italian chef/friend often pours in a bit of champagne or white wine while cooking the risotto! Buon appetito!
