I use my 5.5 quart le creuset dutch oven to bake bread, which requires temperatures of up to 500 degrees. I purchased this knob so that I wouldn't have to keep removing the phenolic knob every time I wanted to bake, and then replace it every time I had to cook. This stainless steel knob is a one-time replacement that will extend the usage of your pot and last for the entire lifetime of use
This replacement knob will allow me to place my Dutch oven in the oven at any temperature without removal. Removing a super hot lid without a knob just seems like an accident waiting to happen. I'm so grateful Le Creuset has made this an option.

Best Answer:The large stainless steel knob is a better fit for the diameter and weight of the 3.5 qt (#30) braiser. One method to determine size is to measure the diameter and comfort of use of the existing knob. A large knob on the lid of the braiser will no longer nestle upside down into the base for storage; a protective cushion is recommended to avoid scratching the enamel. As for safe handling, stainless steel knobs get hot both with stove top cooking and in the oven.
Yes, I m aware that knobs get hot. From what I see, all the knobs are 1" high (including the original phenolic), so it shouldn't change the ability to store with the lid inverted. But I believe that you are correct that the large knob's slightly wider top will be better suited to the very large diameter and heaviness of the braiser lid. :)
I'm not sure it's meant for a braiser. According to the Le Creuset website, the medium stainless steel knob replaces worn or broken knobs on round Dutch ovens (2 qt., 3 1/2 qt., 4 1/2 qt., 5 1/2 qt.), oval Dutch ovens (3 1/2 qt., 5 qt., 6 3/4 qt.) and the 2 3/4 qt. Iron Handle saucepan. I also don't see any mention of braisers on our website.
Thanks, Amanda. The steel knob is also for those of us who cook at, or above 500, which is why I replace all of mine. Braisers are typically used at low temperatures, so it might not occur to Le Creuset that some of us might get creative with our usage and want/need a stainless knob. Plus, they are so much prettier and durable!
