Academia Barilla’s Pecorino Dolce is made from sheep’s milk obtained from the inland hillsides of Sardinia, an island off the coast of Italy. Aged for 60 days, it maintains all the flavors and aromas of the fresh, sweet milk used in its production. Perfect for table consumption, flaking and grating. Wheels average six lbs.  
  • Aroma: bouquet of milk, butter and honey notes.
  • Taste: fresh milk, skimmed yogurt and white flowers.
  • Texture: pale curd, but compact with tiny, round crystals.
  • Aged 60 days
  • Serving suggestions: when thinly sliced, Pecorino Dolce can be enjoyed with fruit, salad or vegetables. Also great added to meat rolls, savory pies and other baked dishes.
