Note: Not for use with serrated knives or knives sharpened on only one side. For these knives, use a waterstone or ceramic stone.

For your good knives
This sharpener works exactly as a wetstone so it's the only one I would put my shun's through. It doesn't knick the edge like some sharpeners can. I use mineral oil in mine but you can use water too and that would be easier to clean up.

Investment Worthy of Your Globals
After recently becoming a Global knife user, I quickly looked into my sharpening options as these knives are different from European knives. This sharpener is good quality. The wheels can be replaced and I like the feature of the water being added to the sharpener. The one complaint I have is that the slots are not Global specific. This is good for being able to sharpen non Global knives, but there is a lot of 'play' there meaning that while you are pushing and pulling the knife back and forth, you must be very careful to keep the blade straight in the wheel. Overall, another great product offered by the reputable Sur La Table. Happy cutting

What angle is set by this sharpener?

Different knives recommend different angles, from 17 to 25 generally

Best Answer: Simple-to-use and very effective hand-held sharpener's coarse ceramic wheel brings life back to very dull blades. Since the sharpening groove and the ceramic wheel are not parallel, the oblique angle of the ceramic wheel is able to restore the razor sharpness of the knife at a 12-15 angle. The MinoSharp 3 is made for Global knives, but all knife brands can be effectively sharpened with this sharpener. No batteries or electricity required. Rinse and drip dry. Made in Japan. 9"" x 2"" x 2 1/2 "". Note: Not for use with serrated knives or knives sharpened on only one side. For these knives use a waterstone or ceramic stone

for a dull Kramer/Shun knife, do I start with the blue slot and make my way to the red and finally yellow

Best Answer: The instructions on this product indicate to begin with the No.2 (red/brown stone) and applying light pressure to slide it back and forth 15-20 and then move on to do the same thing with the yellow stone. The coarse stone should only be used if you are trying to put an edge on a knife that has no edge whatsoever and is completely blunt. The Kramer/Shun knives tend to hold an edge exceptionally well so I would think you would need to use the medium and fine stones only.

replacement wheels

I read someone said the wheel stones are replaceable but find no such item in the Sur La Table site.Where do you get replacements?Also , has anyone used these on W�sthof or Henckels and were the outcomes good

Best Answer: There are replacement wheels available, but not at Sur La Table. And yes, I was able to find reviews from Chowhound users that have used this sharpener on both a Zwilling and a Wusthof knife, and both users said it did a decent job
