PERFECT EGG WHITES FOREVER
I bought this bowl at the Sur La Table store in Newport Beach, CA. My family loves Souffles and meringue. This bowl interacts with the egg whites, negating the need for cr�me of tartar, and producing much superior results. I consider this bowl an necessity. I use it a lot, and I love it

Sheer Perfection!
I had been wanting a copper bowl for some time now and decided to get this for myself as a Mother's Day gift to me. So glad I did! I now make the prettiest and fluffiest egg white omlets! I love it for whipping cream too! It whips up everything in no time! I am in love with it and it looks pretty too!

Must-have tool for whipping egg whites
After spending several years terrified of anything containing whipped egg whites (which never seemed to turn out for me), I finally made the investment to purchase a Mauviel copper beating bowl. As chefs know, copper ions create a more stable, yellower foam that is harder to overbeat than using glass or stainless steel bowls. Your whipped egg whites are also less likely to denature.

But enough about the food science; this is a gorgeous piece of kitchen equipment that will be a faithful companion for many years. To clean, use Mauviel Copperbrill and a soft cloth.

The Mauviel copper beating bowl is WELL worth the investment if you frequently make souffles, mousse, sponge cakes, or any food using a large quantity of egg whites, plus it looks gorgeous in your kitchen

Copper Bar None~Best.
As a New Bride and Our first Couple over for Dinner,had decided Chocolat Mousse al a the French Cooking Book. I wisked the Egg Whites by hand.Lovely Stiffened Peaks. Then,turning to the melting Chocolate,I allowed to leave the ""Whites"". They turned a light,Verdant Colour! I proceeded and All turned out well.Thankfully with no delimmas of the Whites having ""turned"". Not a speck of Chocolat Mousse left. Plus,No Tummy Aches either. Oh,how I Adore My Copper Bowl

The sizes listed in the drop down menu are 4.9 and 7.4 qt but in the description the capacity listed is 2.25 and 4.25 qt. What are the dimensions and capacity of the two bowls that are available to order?

BEST ANSWER: The 2¼qt & 4¼qt are no longer available. At this time we only have the 4.9 & 7.4. The 7.4 is Diameter: 11.8-inches, Height: 5.9-inches & the 4.9qt is Diameter: 10.2-inches, Height: 5.5-inches.

BEST ANSWER: The bowl just over 4 quarts is ideal in size. I use it all the time for egg whites, and it can handle many different volumes because of its high sides and narrow, spherical base.
