Care & Usage Show

  • Special-Care Instructions:
    Copper is an exceptional material for kitchen use. Maintained properly, your copper cookware will last for generations. Before first use and after each use, carefully wash with hot soapy water then rinse and dry. Over time, copper can change color through use; however, this will not change the conductivity of the copper material. Never clean with bleach or steel wool. This can lead to irreparable damage. If food sticks to the inside, soak it with hot soapy water. To restore the shiny copper surface to your Mauviel pots and pans, use Mauviel Copperbrill Copper Polish.

I would marry this pan if I could
The only reason I won't marry this pan is that I'm already married to a husband I love. The reason I love my husband so much is that he bought me this pan as a surprise gift one summer. I make fruit conserves and jams in the style of Christine Ferber, and this pan is perfect! The pan conducts and holds heat beautifully, and is much less likely to scorch than other pans I've used. The shape is perfect for cooking medium or large batches of jam.

Awesome pot and manufacturers . cooks incredibly well. Looks beautiful hanging in my kitchen. Don't know how I did without it for so many years

BEST ANSWER: of course you can it is solid copper-you can not use aluminum on your stovetop. I love my jam pot-one of the best investments I have ever made!
Is cooking with unlined copper a health hazard?

BEST ANSWER: Absolutely not. Copper works very well with sugar. Chefs have been using them for years for jams, chocolates, and eggs or low acid foods. Copper distributes the heat effeciently. I love this pan-the shape allows the fruits to cook down evenly.
Can it be used on induction cooktop?

BEST ANSWER: No. Copper is not magnetic. If you have a heavy cast iron skillet that the copper pan fits inside of you might try heating it that way.Anything thinner than cast iron might warp. Probably the best way though is with a portable gas burner like a camp stove.
Which size is preferable for an iconic, lifetime piece?

BEST ANSWER: Probably a smaller one than the big one I bought. I bought it for my sister-in-law who is making large batches of specialty artisan jams for sale. She is convinced that the even heat transfer of copper makes a difference in the quality and consistency of the jams. I would pick the size according to how large a batch you think that you'll make. If you also want it as a show piece you'll have to polish it once in a while.
How to clean scorches off the pan?

I'm curious about how you would clean off thick scorch marks from the bottom of the pan if you can't use steel wool?

BEST ANSWER: Most people suggest that you use tomato paste or ketchup. Simply rub it onto the scorch mark and let it sit for about 10 minutes, then rub it away
