Wow
I have used every type of thermometer in culinary school and this is the only one I use. The infared is perfect for testing the temperature of a pan or skillet. All you have to do is aim the infared light at the surface of the pan and it gives you an instant temperature. Also there is no clean up involved. Most candy thermometers require you leave them on the inside of the pan which means you will have to clean it after each use. It is sometimes hard to clean hardened candy or caramel off. It also comes in handy because you can monitor multiple pans at once. If you have multiple things going at once you do not have to have multiple thermometers to monitor the temps.
This is also an instant read which means you can check the temp of a roast in a 400 degree oven in 1 second instead of waiting multiple seconds for a lesser thermometer to register a temp. Sorry for long review but I am very enthusiastic about my favorite kitchen tool
