Best Answer:I don't use high temperature when cooking rib's or brisket. Low and slow is the way I roll. I use a smoker pit, for both, and after an hour or two in the smoker, I move them both inside. I always slather the meat with a good sauce, and then wrap tightly in heavy duty foil. Two layers thick, at least. Then in a 225-250 degree oven, for at least 3-4 hours. brisket int. temp. should be 2210 or so degrees, for really tender meat. Ribs will be fall of the bone tender after 3hours or so. stacking 5-6 1/2 racks in the reversible rib rack, helps the smoke circulate really well.
