I had previously purchased the other brand of popover pans in both sizes. Since I am selling my home I had packed up a lot of my speciality pans and put them in storage. My family missed having popover so I decided to buy four of this style pan in the mini size. I AM SO GLAD I DID!! My popovers never cooked as nice or look as uniform. My family said they tasted better since this pan gave a nice crust to the popover vs the other brand. I use Sur La Table's boxed popover mix, so the recipe wasn't the difference, it was the pan. The pan came with a popover recipe that I have used subsquently and achieved equal results to th popover mix.
Incidently there was an error in my my order of the popover mix and I was sent King Arthurs Pastry flour by mistake. I called customer service and since I had paid for quick delivery they over night the popover mix to me when I explained I had ordered it for Christmas dinner. Sur La Table is one of my favorite stores and mail order, this experience has reinforced my opinion of their outstanding level of customer service. If you have a family, Make Sure you order more then one pan as most recipe's make 24 mini popover's and they are great even as leftovers. :-)
This pan performed perfectly for me and the accompanying recipe is super-easy and the resulting product is very tasty.. Hubby thought he was in heaven eating these pop-overs because they reminded him of the Yorkshire Puddings his British mother used to make.
The recipe calls for filling each of the wells by 2/3. I would suggest filling only 1/2 full in order to make the batter go further. Haven't tried this yet so not certain if the pop-overs will still rise as well as they did when I followed the recipe. Will have to experiment the next time around.
Is the cooking time different on the mini popover pan vs the regular one?

Best Answer:4 large eggs 1 1/4 cups milk 1 1/4 cups flou 1/4 cup butter, melted 3/4 tsp. salt Preheat oven to 400° F. Grease pan; set aside. In medium bowl, beat together all the ingredients. Using half the batter, fill each well 2/3 full. Bake 20-23 minutes, until golden brown. Remove popovers from pan. Repeat filling and baking procedure with remaining batter. Makes 24 petite popovers.
