Description

SPECIAL VALUE Handcrafted by expert artisans in Japan, this Shun Premier chef’s knife features a core of proprietary VG-MAX super steel clad on both sides with 34 layers of Damascus stainless steel. All Premier knives are hammered by hand with a technique known as tsuchime to a beautiful finish that reduces drag when cutting, preventing food from sticking to the blade. Ultra-thin blade edges retain a lasting and razor-sharp edge for precision on the cutting board.

Wow factor
Not only will this knife bring alot of ""wow"" factor to the table, but it holds up great in the kitchen. As a professional chef, this is my daily use knife. The handle I find to be more comfortable than standard Shun handles (not that they are uncomfortable), and the blade is VERY durable and holds up great to heavy use

Have been reading about this brand and interested to try it Prepare a lot of vegan and vegetarian meals and there is a lot of slicing and dicing and from what I've read this knife moves quickly through vegetables and herbs

A work of art. I didn't think that I could be seduced from the Shun Classic but this knife appears to even better mimic the ancient Samurai sword-making art. Learned many years ago one really excellent tool gives more pleasure than a roomful of barely adequate junk.

BEST ANSWER: No. This one is a right handed knife.
I'm deciding between a Shun Premier 8" chef knife and the Miyabi SG2 rocking santuko. I've tried both and like both. Any expert opinion or advice?

BEST ANSWER: I have 3 Shun knives and absolutely love them, I have never prepped with a Miyabi. I cook constantly and am very critical and like to have efficient , quality equipment. Good luck.
How does this Shun compare to Miyabi Artisan SG2 Chef's Knife? At Sur La Table, Shun offers free lifetime sharpening - so that seems a plus. Some reviews claim the angle of the Miyabi is bette, although I understand SG2 is hard to sharpen. Any insight is appreciated.

BEST ANSWER: The miyabi hands down. Sur La table will sharpen for $5. Not that you will need it anytime soon if your using it on a good surface

BEST ANSWER: You should contact your local Sur La Table store to arrange to have your knife sharpened. If you are not near a store, and you do not feel comfortable sharpening this knife yourself, you can take it to anyplace that sharpens knifes. Please note however that these knives are designed to hold their edge for a very long time and do not need to be sharpened often. If you feel as though your knife is losing its edge, it probably just needs to be honed. This will re-align the steel and return it to its original sharp edge. You should hone your knives at least once a week and I have known some professionals who hone after every use to retain the edge on their blades
