Madeleines tend to be very easy to burn, so I like to put the pan in a water bath while they bake to encourage even cooking. This pan is not the same as the small jelly roll pan which was annoying and made the process difficult. However, it made classic madeleines that were delicious. It is easy to fill and wipe between each well before putting in the oven and it was easy to clean
I bought this mold based on another reviewer's opinion, and agree wholeheartedly with her review. She also suggested using a water bath during the baking process; I did not, and although both batches were delicious, they were a bit overdone. So use the bath, like the lady suggested (unless you prefer brown edged Madeleines).
