Great product
I have always wanted to make Madelines and when I saw this pan at Sur La Table, I knew now was my chance. I found a great recipe and the rest was so simple. The Madelines slid out of the pan so easily

This pan is wonderful and easy to use & clean. If you follow your recipe diligently, it produces the most moist, pretty-shaped madeleines w/o sticking to the pan! And then you too will feel the urge to quote from Proust's ""Remembrance of Things Past"":

""The sight of the little madeleine had recalled nothing to my mind before I tasted it...."" but ""....as soon as I had recognized the taste of the piece of madeleine soaked in her decoction of lime-blossom which my aunt used to give me .... immediately the old grey house upon the street, where her room was, rose up like a stage set to attach itself to the little pavilion opening on to the garden which had been built out behind it for my parents.""

this is my second purchase of this pan. i've used the first one for over 6 years now and love it. hard to scratch up, easy to pop out (but i still butter/flour each mold), even cooking, no warping. better than other mold i've used. getting another one b/c my madeleines (tom keller recipe from ws recipe site) are so popular now, i have to make 2 batches at once! :)

Does this pan produce madeleines with deep, well-defined flutes? I'm looking for a presentation like the cover of the madeleine cookbooks! My current pan makes lovely ones, but not as well defined as the cookbook picture.

BEST ANSWER: Yes, these are authentic pans, made in France.. They make lovely Madeleines... The trick is to bake them long enough to get a slight crust ... The ridges are more pronounced that way. I have 2 of these pans and have purchased more as gifts :)
