Miyabi steel
The tungsten carbide in the steel easily hones the very hard Japanese super steels.I am very pleased with the purchase.Good value for the money but still working on my technique!!

It should work well with my Mizu chef knife. I needed a steel hard enough to work with a knife out of SG2 steel.

My favorite knives are my old fashioned vintage Sabatier carbon steel. But the newer stainless, like the Miyabi (which are NOT as sharp as my 35 yo Sabatiers!!!! Too bad because the two I have are SO pretty) are also so much, much, much harder to hone. They require a very, very hard sharpening steel. I thought I'd give this one a try.

BEST ANSWER: Yes, as long as it is harder than the steel of the knife you're honing.
I bought a Miyabi Fusion paring knife. It is getting dull already. What do I do?

BEST ANSWER: To keep the edge of your knive, honing should be done after each use. If you find that honing your knife is no longer helping it to keep the edge, then it's time to sharpen. If you don't wish to sharpen your own knife, Sur La Table will sharpen your knives in store for $5 per knife
Is this a grooved or smooth rod?

So this is both a honing steel AND a sharpening steel? I can use this to sharpen my knives, and I won't have to get use any other sharpening tool?

BEST ANSWER: This is a honing steel, the honing steel must be stronger than the blade steel of a knife and is a tool frequently, if not daily, depending on use of the knifes to keep sharp edges. Your knifes should still be taken in to have a fresh edge applied to them annually. Sharpening and honing are different. Sharpening normally requires removing material to make a fresh new blade edge and is something I only hire professionals to do. I hone my blades before uses every time. My edges maintain their sharpness. This honing steel also works with German blades.
