Huge Fan!
This has become my go-to pan and the one I grab first for everything. I've had my Scanpan for two years and the non stick peforms as well as it did on day one.

I can't say enough great things about this cookware! It's really well made, heats fast, cooks evenly, and is so easy to clean. I love that I can not only cook an omelette perfectly every time, but that I can also brown and caramelize in this pan as well

Love this pan
I use the 8"" skillet every morning for my breakfast, and I can't say enough about it. I've used it just about every day for about a year, and finish is just as smooth as the day I bought it. It's super easy to clean and the nonstick surface is completely unparallelled.

All in all, it's a great pan for a great price

Best Pan Ever!
I LOVE THESE PANS!! I have the 8"" and the 12"" skillets, and I have used them almost every day since I bought them. Some non-stick pans will discolor your food...but not Scanpan! Super easy to use, and clean. They are always my ""go to"" pans

Great Skillet!
I have been an SLT employee for ten years, and this is hands-down the best nonstick pan I have ever used. I have three sizes, and I use at least one every day. I love that they are scratch resistant and dishwasher safe, too. One of the best investments I have made in my kitchen

Excellent product
I have the 8"" and 12"" skillet. Originally my goal was to buy a non-Teflon, non-stick pan. I first purchased the 8"" skillet and glass cover. My experience with the pan has been amazing. I can now fry an egg using just a little water and the glass over! Heat the pan up, crack an egg in it. Wait till it starts turning white, put in a few tablespoons of water, cover the pan and after a few minutes, - a nice, perfect egg over easy! No burned brown bottoms of fried eggs and they just slide right out of the pan. I used this pan consistently for a few weeks to see if the surface would wear or change. It didn't. So I went and bought the 12"" skillet and lid. Next I cooked a big rib-eye steak. It browned perfectly and looked just like it came off an outdoor griddle. The heat dispersion of the pan is excellent - even and constant - a mark of a great design. The pans are on the pricier side but they are worth every penny

Worked great, for a while...
I purchased this pan about 2 years ago after trying multiple cheapo non-stick pans. For the first several months, this pan worked like a charm - I could use a minimal amount of ghee/oil to cook with, since the non-stick actually worked! Within the last few months, however, I have had a LOT of trouble- no matter how much ghee/oil i use, my eggs stick to the pan every.single.time. I'm super bummed, and looking for a new alternative pan.

Perfect for eggs
I love eggs and love them sunny side up, so having a glass lid is crucial. The first time I used it, I decided to put it to the test and not use any oil, butter or water. The egg cooked nicely, and slid off the pan without using a utensil, but a little butter definitely tastes better :)

Definitely the best nonstick I've used to-date

This pan is perfect for no-oil cooking
I have been cooking without adding oil for the past 6 months. I have been searching for a non-stick pan that is environmentally safe and that does not have a ""coating"" that will break down. This pan meets those criteria. Plus it is perfect for browning onions, celery and carrots or mushrooms without any additional fat. I have just ordered the 4 qt. saucepan also. Of course, an added bonus is that clean-up is just a breeze

Hubby can't destroy it
We've had the wide range of those other 'non-stick' pans for ages. No matter what I said, my family and hubby in particular, always used metal utensils on them and I was forever replacing them and repeating ""Black on black, metal on metal.""

Decided to give Scanpan a try even though I was doubtful. Started with the 8"" pan and it quickly became the 'go to' pan for everything from eggs to grilled cheese. In fact, it just sits on top the range. No sense putting it away. It cleans up fast, doesn't stick, requires very little fat or oil (in fact none works well, too), and isn't bothered by metal spatulas at all. It feels solid, but not too heavy, and has a nice balance.

Here's something else about the pan besides the nonstick quality�it has a nice flat bottom. Even with the curved sides, there's good 'cook space.' Be aware though, for people who are upgrading from standard skillets, this one has a disk on the underside for even heating. What this means is that it takes longer to heat to searing temps. I usually just put a drop of water in it to see if the water beads and bounces to see when it's ready.

At first I hesitated because of the cost, but in the long run, it's definitely more cost effective to get a Scanpan than to keep replacing the cheaper pans that don't last as long or take a beating. I'm replacing all my skillets with Scanpan

Buy one
I don't like to write reviews about any product until I've had some time to use them for awhile. I bought 8"" after taking a look at quite a few other choices. Generally with non-sticks they don't last and begin to show wear quickly regardless of how you take care of them. My solution to this is to be a cheap one and just replace it after a year or two. Not exactly what I like to do but when the $100 lasts as long as $30 you get the point. Scanpan (which I had not heard of) seems to be holding up very well after 1 1/2 years of almost daily use for just about everything. I don't use metal in it and clean the bottom with bartenders friend and Brillo after every use. The bottom looks like new and the non-stick is in almost perfect shape. Just a sponge for cleaning on the non-stick surface will do the trick with some hot soapy water. In use I like how well you can control the heat on the pan rather quickly once it comes up to temperature and you can use it for almost every application.

Buy one and you'll love it

Great value
Very little oil required to a obtain a nice sear . I use my Scanpans daily with NO labor intense clean up afterwards.

I just got this pan last weekend but have been using it for EVERYTHING since I got it. I love the feel of the pan and the amazing even cooking. This is so worth the price!

Great pan for some purposes but does lose nonstick over years
I have 2 main ScanPans, one a 9.25 in Classic and the other a similar Professional. The Classic is better for browning meats, etc., while the Professional retains its nonstick surface much longer for eggs and other "sticky" foods. After several years, however, both require soaking for cleaing some foods, even when I have carefully followed washing instructions. The lifetime warranty is a bit of a sham; my first Classis, after just a few years, lost much of its surface (as some others have claimed), and ScanPan would honor the warranty only if I sent the old one to them at my expense AND they agreed that the pan was defective. I still consider my current pans to be the best nonstick pans I have tried--I just assume that they will need to be replaced after a few years.

Perfect
I've had my 8" skillet since May. In that time it's been in the dishwasher several times, I've taken it up to high heat to sear a steak, turned sausage patties with a metal fork and even put it in the oven. I'm giving it 5 stars because even after all of that it STILL looks brand new! I love this pan.

AMAZING pan
I love this pan -- after dealing with traditional non-sticks... that don't always live up to their name.... the scanpan blows everyone away! The clean up is a breeze... with even heat distribution! Perfect pan for scrambled eggs!

No Rivets!
I love my 8"" Classic skillet. The nonstick surface is durable and super easy to clean, just like all the other Scanpans I own, but I'm partial to this one because it has a rivetless handle, ensuring that your cooking surface will consistently be as clean as it can be

Use it every day
Oh my goodness, I don't know how I survived before getting this pan. My dish washing has decreased significantly and my food is much healthier because I use little to no fat. Love love love this pan and will be getting more! Once you get one, you're spoiled for life!

Best Answer: Regarding SCANPAN's space-age surface: Both ceramic and titanium are incredibly hard materials. After having pressure-cast the raw pan body, the ceramic-titanium compound is super-heated to 36,000 degrees F (thirty six thousand degrees!) at which point it liquefies. The ceramic-titanium enters a ""plasma state"". That liquid plasma is then fired into the pan surface at twice the speed of sound. Lots of heat and impact. The ceramic-titanium literally anchors itself in the aluminum surface and becomes one with the pan.That's NASA technology. The SCANPAN surface technology is based on the principle of using ceramic tiles on the space shuttle, which prevent the shuttle from burning up during re-entry into the earth's atmosphere. We have that concept patented for aluminum nonstick cookware. When looking at SCANPAN CLASSIC NEW TEK under a microscope, we see something like a lunar landscape. A myriad of mini-craters, all similar in size and shape. These craters were created when firing the ceramic-titanium compound into the cooking surface, and are then filled with our specially formulated NEW TEK non-stick compound. The compound is in the craters, not on them. The ceramic-titanium protects it from being scraped away. Even if you use a metal spatula. We have tried. Ran a metal spatula with a 2-lb-weight over the SCANPAN surface 300,000 times. A third of the spatula was literally ground away after the test (performed by an independent laboratory in Germany). The pan's non-stick surface and performance remained perfectly intact!The MOHS scale measures hardness of gemstones. Diamonds come in with a perfect 10. SCANPAN CLASSIC is a 9.5. There is no tool in your kitchen that could damage or destroy the SCANPAN surface. If we can't destroy the surface, we can't get at the non-stick compound. If we can't get at the non-stick compound, it can't be scraped away. If we can't scrape it away, it will work for as long as you own the pan. It's in there for keeps! This is truly the last non-stick pan you will ever have to buy (pardon our using this rather overused phrase!). And we guarantee it with a full lifetime warranty

With the scanpan classic be put in the oven considering the handle is plastic?

Under product description it states the scanpan classic is heat resistant up to 500 degrees is this true with it having a plastic handle?

Best Answer: The Scan Pan products are pretty amazing!!! Yes they are heat resistant up to 500 degrees, even with the plastic handle. This means that if you use them in the oven, they will not melt, warp or become damaged from the heat. They can get very warm when used in the oven though, so please use mitts when removing them

Is the nonstick surface good for cooking eggs? I like a really slick teflon type experience for fried or scrambled eggs.

Best Answer: The Scanpan is incredible. The first time I used it was to cook a fried egg in a Sur La Table cooking class. I added a very small amount of olive oil to the pan just to give a nice coating. While cooking I literally had to hold the egg in place with a spatula to keep the egg from slipping away from me just to turn the egg over. That is what sold me on the pan. I purchased the pan ( 8") that night when class was over. I have had my original pan for about 3 years now and use it daily. The surface is still as good as new. Cooks and cleans like a dream. Best skillet I have EVER used. I have also since purchased two more sized plus the lids.

Why does the description state that it is compatible with all cooking surfaces, except induction? What is the issue with induction?

Best Answer: Induction cooking surfaces use magnets within the cooking surface and the magnetized base within induction-compatible cookware to generate heat. The benefits of this type of cooking surface are that it typically heats very quickly, and once the piece of cookware is removed, the cooking surface becomes cool almost immediately.

Cookware in the Scanpan Classic line wasn't made to be induction-compatible, as its base is non-magnetized. However, Sur La Table does carry three exclusive lines of Scanpan non-stick cookware which ARE induction-compatible: Scanpan IQ (the Classic line with a magnetized base; available only online), Scanpan ProIQ (the Classic line with a magnetized base and an ergonomic metal handle), and Scanpan CTQ (a 5-ply clad line [5-ply refers to the five layers of stainless steel, aluminum, and aluminum alloy that make up the base of the pan.] with a magnetized base and an ergonomic metal handle.
