Description

SPECIAL VALUE Authentically Japanese in design, each knife features 101 layers of steel—50 layers clad on each side of the Cryodur-hardened SG2 microcarbide steel core—forming a delicate Damascus pattern with a Rockwell hardness of 63.

Each blade in our Birchwood collection is hand-honed using a traditional three-step honbazuke process. It’s sharpened twice on whetstones with custom grits, followed by mirror polishing on a leather wheel.

The genuine hamon edge—a visible line where flexible outer layers and incredibly hard core layer meet—is reminiscent of legendary Japanese swords. A hamon edge is a sign of superior craftsmanship.

The D-shape of the natural Masur birch handle creates a comfortable grip and ensures tireless cutting, even with frequent use. Handle features an intricate mosaic center pin, red detailing, and engraved endcap.

This elegant, efficient santoku knife works well with a forward and backward stroke or straight-down chop. A work of art
It is a shame the Miyabi birch wood series is being discontinued for it is the finest line of knives Sur la table has to offer. The razor sharp SG2 blade with it's beautiful flower Damascus pattern and stunning birch wood handle is a match made in heaven. I bought this santoku and immediately sold my shun Kaji santoku! This knife feels so great in the hand and functions so well! The blade stays sharp for a very long time. The only thing I am surprised about is that the birch handle was left untreated (stabilized), however having the untreated wood in hand is what gives it the great feel that it has. Just wash it immediately after use and treat with mineral oil from time to time. A great knife like this deserves the attention of a passionate and serious chef. This series of knife is the finest you'll find of a relatively large production. In my opinion they are better (and more beautiful) than the new Miyabi artisan series. You will have to have a master bladesmith custom make you a knife to get anything remotely better. I own many high-end kitchen knives and these are the finest I have outside of custom hand-forged Japanese knives. I highly recommend

I currently use Shun but have found the blades don't hold their edge, even after sending to the Shun Factory for sharpening they weren't that great. Have read great reviews and decided to try Miyabi
