Description

Professional 3-stage knife sharpener combines the strength and durability of a triple-bevel edge with the flawless, razor-sharp 15° EdgeSelect® technology to sharpen both fine-edge and serrated knives.

This is the ideal sharpener for converting traditional 20° factory edges of European and American household knives into the high-performance Trizor 15° edge. The versatile XV™ sharpens contemporary double-bevel or single-bevel traditional Asian-style knives, too.

Featuring multi-stages, 100% diamond abrasives and patented flexible stropping discs, the XV creates the Trizor EdgeSelect edge, which helps prolong the life of quality knives by applying a triple-bevel arch-shaped edge that resists dulling longer than conventionally sharpened hollow-ground or V-shaped edges.

The 3-stage process and efficient flexible stropping disks sharpen the edge with minimal metal removal, further helping extend the life of fine knives. Unit also features flexible spring guides to provide accurate control of the sharpening angle, for the thickest or thinnest knife blades, ensuring ultra-sharp edges quickly and easily. I was cooking with a friend who's knives are usually not very sharp and was surprised at how sharp her knife was. When I remarked at how nice the blade was she told me that her son had this great new knife sharpener. It was this chef's choice model. Also I read the Cook's Illustrated article about how you can convert your 20 degree knives to 15 degree with this sharpener.

3 stage sharpener is best. All my blades have 15 degree edge except cleavers. The 1520 may do both European 20 and Japanese 15, but lacks the ability to stage bevel the edge which means more frequent sharpening and knife wear. Best to do my Shun knives with this if I don't want to send back to factory.

Does this knife sharpen Japenese style knives?

I do not know the degree but I know that it is not the normal German knife 20 degree angle on the knife.

I have a Shun serrated knife, does this sharpen serrated knives? What about paring knives?

BEST ANSWER: This sharpener is good for Asian and European knives. It will change the edge to a 15 degree angle, which is good for more precise cutting and slicing. Most european knives have a 20 degree edge, so a 15 degree edge will improve the knife.
Is this good to sharpen ceramic coated knives?

BEST ANSWER: No. Ceramic knives are not capable of being sharpened at home in any way. They can be sent out for sharpening but this machine won't do it and might even be damaged by trying.
Does this sharpen pen knives, pocket knives, paring knives, etc?
