This is the ideal sharpener for converting traditional 20° factory edges of European and American household knives into the high-performance Trizor 15° edge. The versatile XV™ sharpens contemporary double-bevel or single-bevel traditional Asian-style knives, too.

Nope! This one only does 15 degree, meaning that your 20 degree knives (for me Wusthof) will be converted. I did a little bit of reading before deciding to commit.
During the sharpening process I wasn't really sure that the edges were looking all that much better.
I was quickly disabused of that notion once I started using the knives I had just sharpened!
What a difference! They were actually better than new.
In short, you won't be disappointed with this sharpener.

I do not know the degree but I know that it is not the normal German knife 20 degree angle on the knife.
