What is the most used size for a tart pan? I would really like one, but, would like to buy the most used size first

BEST ANSWER: The general consensus is that there isn't really a standard sized tart pan. However, I read a cooking blog that said 9"" tart pans are usually used for more gourmet and high end recipes, where 11"" tart pans are typically used for day to day recipes. It might be in your best interest to get both

BEST ANSWER: No, I do not find the edges to be sharp. I do not think the edges would cut you. Like any tart pan they are blunt but not sharp
how high are the sides?

Will these tin pans rust?

BEST ANSWER: I have only washed mine by hand with dish soap and water and do not have any rust issues. I think if you keep them away from any harsh cleaners and dry them thoroughly, there will be no rust problems.
How high are the sides?

BEST ANSWER: The height is an 11/4 inches, when measured with a ruler. With any tart pan the most important factor is how much capacity is needed. An average tart recipe calls for a 10 to 12 inch tart pan. I needed a smaller tart pan to make a Linzer Torte but in tart form. Hope this helps.
Gobel makes this Tart Pen in Seven Inch diameter. Do you have it or can it be ordered?

why is the 8" cost more than the 9.5"?
