Read the fine print
Admittedly, my complaint with this product is primarily my own fault. I looked at the photos on the SLT website, then did not read the description closely enough to realize that the ""17 inch"" pan (which is actually only a 16"" pan according to the box in which it was packaged!) does NOT come with a lid! (Pictured is the 13"" pan, which does.) Alas, I could not buy a lid for the larger pan, so I have returned it & ordered the smaller pan instead. Would have preferred the larger pan. Why no lid? Why no individual lids for purchase? Why only available online? Shouldn't be this hard. Sad :

I Love It!
I own all Viking professional cookware. I've been looking for a 16""+ paella pan for entertaining. It works very well on my 13"" thermador induction burner. Just remember to keep a low/med steady heat. The crust that develops at the bottom give it the lightly smokes flavor. I need another paella pan for parties were I'll serve 2 varietys of Paella, and I'm considering the Demeyer 18"" paella pan only because it's larger . You will not be disappointed will this All-Clad paella pan. Take it fom me, I'm very picky as to what equipment I use in my kitchen

Paella and more
Pricey but you get what you pay for with All-Clad. I've made Paella at least 1/2 dozen times since the purchase and it works the way you want it to work! We've also used this as the master pan for large batches of sautéed onions and cooked spinach. Great for cooking and easy to clean!

All Clad paella
Got this pan for my induction oven. Fantastic! Of course, this is the kind of quality I've come to expect from All Clad, but this one really stands out. Have the 17" version. Of course it's great for paella, but I pan-fried 6 tilapia fillets with it at once last night-so versatile! Bound to be my go-to pan for so many things!

BEST ANSWER: Although minimal, there are differences. Paella pans have a larger cooking surface than braisers & the sides are straight, not sloped. This is also the case with these 2 pieces.
Is there any difference in construction between the paella pan and a regular skillet? is the skillet thicker on the bottom? Can the 17" paella pan be used as a really large skillet?

BEST ANSWER: The sides on a paella pan don't slope as much as a skillet. There's more surface area touching your food, which is ideal for paella. In theory, you can use a paella pan as a skillet, but I wouldn't suggest using a skillet to make paella.
Difference between the All-Clad paella and braising pans

I see that the tops are different, but the pan dimensions seem so close. Why use one over the other

BEST ANSWER: Each piece of cookware is created for its own specific use. It's the lid that really makes difference.Braising is done by searing meat or vegetables at a high temperature, then slowly simmering with a little liquid on low heat in a covered pan. BEST ANSWER: As there is no nonstick coating (a feature which was important to me) I find the maximum temperature is mostly related to ingredients like sugars and the smoking point of the oil being used at the time. I have never used gas (always had cook tops) and so I am at a bit of a disadvantage. But I really like these pans and have even promised my daughter she could have one of the four. It is always possible to recover the paella when it wants to stick by backing off the heat and adding a little more stock.!

BEST ANSWER: Wish I could. We have the 13" and it makes a ton of paella. There are just two of us so anarchy goes quite far. My guesstimate is a minimum of 8-10 but it depends on serving size
