Breville’s Custom Loaf is perhaps the smartest bread maker ever. Fresh-baked bread has never been easier to make at home. A clever interface computes temperature and baking time when you make a selection, and a Turn and Confirm dial gets you started on any recipe in seconds. Maker also mixes dough for pizza, focaccia and pasta.

The Custom Loaf allows you to select when you want the bread to be ready, and a dispenser automatically adds fruits and nuts at the appropriate time. Unlike conventional kneading paddles, this paddle collapses, preventing an indentation from forming in the bottom crust. Custom Loaf has 13 automatic and manual settings, including gluten-free and quick-bread settings, 3 crust color options, plus bake-only and jam functions.

An easy-to-read backlit LCD display guides you through the process, and a handy viewing light lets you check on bread without opening lid. The 13-hour preset timer means you can wake up to fresh-baked bread in the morning, and a pause function allows you to hand-shape crusts and add glazes. The bread pan is nonstick for fast and easy cleanup.

Best Bread Ever
I make bread by hand - but I must admit the Breville Bread Maker is wonderful. It allows me to do other things while making bread. The recipes are excellent and I have made at least 10 of them since receiving this 2 weeks ago! My friends are happy.

The light is wonderful at the top, easy to press button and you really can see! Easy selection buttons for all the types of bread that you are making such as whole wheat, pizza dough, dough, etc - and the crust function selection is easy. You can modify a recipe such as cooking time - that is very easy to do. Measure like they say - scoop in the flour to the measuring cup - no dipping in - and you will have a wonderful product.

The paddle is easy to remove if you don't want it at the end of cycle 2 (buzzer sounds) and I think under hot running water, very easy to clean! Do not place pan or paddle in dishwasher - not necessary, just clean right away and you are fine. TIP: When you are ready to place the pan into the machine, look underneath and turn the dial so it is side to side and the pan fits into the maker very easy!

This makes a wonderful crust! It browns beautiful unlike the ""zoe"" competitor and it is so simple to use. Just remember to remove the label covering the selection LCD screen when you get the machine - I didn't, and I thought my machine was not working! Silly me!

I am buying this for my daughter for her Xmas present. The cinnamon bun recipe that comes in the recipe book is wonderful! I do use the gluten that they recommend. I found it at our grocery store

Best Bread Baker I've Had
This is the third bread baker I've owned. All three of them have been by different manufacturers. I chose the Breville because it has more features than any of the other bakers I've used. I've tried three recipes that came with the baker. The first one I tried was the Rosemary Olive Oil Bread and it was a disaster. I put it on Delay Start and it didn't knead the dough so it just cooked the ingredients in a slimy lump. I'm sure I set it up incorrectly. I skipped the Delay Start on the next two loaves of bread I baked. I tried the basic white bread next and it baked a wonderful 2.5 lb loaf that I used for sandwiches and toast. Then I made a Sun-Dried tomato bread (without the feta cheese it called for) in a 2 LB loaf and it came out perfect as well. The separate dispenser was very handy for the diced tomatoes. I use the optional ""Vital Wheat Gluten"" in my recipes as recommended by the manufacturer and it seems to work very well. I also use organic bread flour. This is one of the reasons we bought the bread baker, so we can control the ingredients. The baker has a light button you can use to see the bread kneading and baking. The bread pan is easy to clean and the collapsable paddle leaves a smaller indentation in the bread than my other bread bakers did. Other features I like are that you can choose what size loaf you want to bake, 1, 2 or 2.5 LBS, and you can choose the darkness of the crust. I have only used medium and the crust has been a golden brown. The machine is pretty big and it takes up a lot of counter space but it is very light weight. I think Breville should consider a higher quality Instruction/Recipe booklet. It is a flimsy wire-bound booklet and the cover tore immediately when i tried to remove the sticker they placed on it to remind the purchaser to register the product. The bread baker seems kind of pricey but it has more features than other bakers

Wow. New technology makes a difference!
I've had a breadmaker since 1989 when I bought a Hitachi HB-101. I had that guy forever and wore it out. I used the doughmaking cycle to make cinnamon rolls and my neighbors would smell them cooking and come over with an empty plate. I bought the Breville unit because I like Breville products AND because of the horizontal loaf. Although I have had to adjust my recipes for this unit (apparently no two bread machines are alike), it makes a wonderful loaf of bread and the dough cycle works as well as my old unit. This one has the feature that will add dried fruit or nuts or whatever in the mix-in cycle, and that is a big plus.

Love the Bread Machine
Having never made bread before, we've made 5 loaves and each one came out absolutely perfect. We especially love how easy it was to make a loaf of raisin bread. The loaf of Honey Wheat was super easy and very good. We love how easy it is to enjoy fresh, delicious bread!

By the way, clean up is super easy.

We would definitely recommend this machine
