The Pro collection by Zwilling J.A. Henckels combines their 280 years of knife-forging experience with the simplistic, yet innovative, design of renowned Italian architect Matteo Thun. An angled bolster helps you cut with enhanced precision, safety and comfort, and encourages a professional “pinch grip.” The optimized blade shape reduces hand and wrist stress to prevent fatigue with prolonged use.

Using Zwilling’s exclusive Sigmaforge® process, knives are precision-forged from a single piece of Friodur® ice-hardened high-carbon German stainless steel, laser-cut for optimal blade angles and finally polished by hand. This results in a sharper blade with a 57 Rockwell hardness for excellent edge retention and superior resilience.

Beautiful, all-new design features an angled bolster that allows the entire length of the blade to be used for chopping, slicing, dicing and more. This unique feature also permits the entire length of the blade to be sharpened from bolster to tip.

Dynamic handles feature rounded edges and ultra-ergonomic design to reduce fatigue with extended use. The classic triple-rivet handle has a full tang for impeccable geometry and perfect balance. Exclusive special-formula steel and sturdy polymer handles ensure a lifetime of use.

Great Knife
I love this knife. It holds an edge extremely well and is the right size. The steel meets my needs and I don't have to baby it but I still do. I hone it once after every two uses with a ceramic honer. I also have the pro 10"" chef knife and got this when my better half was scared to use that knife. I like to have both of them because between the two of them I can cover any task, slicing meat, chopping, breaking a hen down and the blade on both rocks perfectly well and is also wide enough to scoop up what I've just chopped to transport it to the skillet. But if I had to get only one, I'd get the 8 inch if I wasn't planning on getting the 10""

Have the larger version of this knife and thought it would be helpful to have to chop smaller things like herbs and garlic, etc.
