They were right - deep grill lines and wonderful carmelization (sp?) and clean up was easy. The 10"" pan is the perfect size for my glass top stove; and the enamel on the exterior keeps the pan from scratching.

Grill pans need to be heated to a hot surface temperature to create a good sear. For the best grilling results, it's important that your grill pan be sufficiently hot before you begin cooking. Only by reaching the right temperature can you produce sear lines from the ridges of the pan. If your food is too wet or the grill too cool, you will not achieve a good sear & your end result may look & taste steamed. Here are some tips to optimize the use of your grill pan:
Be sure to preheat your pan dry. Oil added to a cold pan will likely produce smoke.
After you have preheated your pan, sprinkle a few drops of water into it. If they steam but don't sizzle, continue to heat the pan a little longer. If they sizzle & evaporate almost instantly, your pan is ready to use.
Once your pan is preheated, brush a thin layer of oil onto it. Please note that olive oil is not recommended for a grill pan due to its low smoke point.
When grilling & searing, food needs to be quite dry. Take paper towels & pat away any excess moisture, including marinades you may have used. You can brush on a little oil if you prefer.
For the best grill marks, be sure to leave your food undisturbed for several minutes after placing it on the grill.
If you choose to finish in the oven, this grill pan is oven safe to 500°.
