PATENTED NONSTICK CONSTRUCTION
Unlike most nonstick cookware, which relies on a coating, Green Tek™ nonstick cooking surface is created by firing a ceramic-titanium compound into the pan at 36,000°F and twice the speed of sound. The ceramic-titanium particles briefly liquefy and permanently anchor themselves to the pan. A specially formulated nonstick compound is then embedded in the surface, ensuring a lifetime of use without peeling or interacting with food.

The industry-leading, squeeze-cast cookware features a 100% recycled aluminum body and a thick base that guarantees quick and even heat distribution and no hot spots. Pan is guaranteed not to blister or peel.

The stainless-rimmed, tempered-glass lid with steam vents makes it easy to view food while it cooks. The lid is tight fitting, so it retains moisture while you cook and keeps food hot until you’re ready to serve. Amazing, Useful, Durable
I now own two of these pans. We had an accident one evening and my teenage daughter left the pan and a ladle on low on a gas range and we all went out for several hours. The ladle melted, fire department was called. We returned home, the house was fine. I assumed the pan was ruined filled with melted plastics. Before the replacement arrived the original was back in service with no damage to the non-stick surface, no difference in performance and no smokey taste. I am only sorry I didn't take a before picture to show he severity of the event.
Also the pans preform amazing for all types of cooking. Not quite the same sucs as stainless but the closest I've ever seen in a non-stick surface. I love these pans and use them a LOT every day. Even to the point of abuse at times. Worth every penny.

what is the diameter and height of the 3.8qt pan and would the lid fit the 11 inch skillet?

Best Answer: This saute pan is 12 3/4"" in diameter, and 2 1/2"" deep. The lid has a 12 1/4"" diameter, and would not fit on an 11"" skillet

What is the difference between Scanpan Pro IQ and Scanpan CTX saute pans?

Best Answer: The inside of all scan pans are the same. The pro IQ is black on the outside like the basic scan pan with a much fancier stainless steel handle. The CTX not only has a fancy handle but is also stainless steel on the outside and has more stainless steel on the lid.

Are the 2.8 and 3.5 capacities shown here actually liters? And the capacities in quarts are 3.0 and 3.7?

Best Answer: My 4.5 quart version arrived in a box that said 3.8 quarts. There was a simple answer, however: 3.8 Imperial quarts is equivalent to 4.5 US - a little confusing, but that doesn't change the fact that this is a great pan, with a substantial volume capacity.

How do I clean my Scanpans? I have three. The larger one is fine but the smaller ones are no longer smooth. I have trouble cleaning them after cooking things like Egg Beaters. I have tried putting them in the dishwasher and using a soft scouring sponge without luck. I am afraid to use harsh cleansers. Thank you.

Best Answer: I would avoid putting them in the dishwasher from now on as dishwasher detergent can be pretty harsh. I use Bar Keepers Friend (it's like Comet but less abrasive) and a Libman brush with fairly soft nylon bristles. I've had good results so far, so hope that helps!

Best Answer: Pro IQ has a hard anodized interior & exterior, whereas CTQ has a stainless steel exterior.

What is the diameter of the base of the pan? Induction ranges have minimum size requirements but most dimensions are for top/largest part of the pan instead of the base.

Best Answer: The 3qt has a cooking surface diameter of 9".
The 4.5qt has a cooking surface diameter of 11".

am baffled by use of aluminum...when not healthy choice?

why is it aluminum is used in all nonstick pans...tis not good to cook with,for health reasons???????

Best Answer: Aluminum is used in cookware because it is a fantastic heat conductor, and is significantly cheaper than copper. Rest assured that all aluminum used in cookware is sealed between layers of consumer-friendly materials, such as stainless steel, or ceramic titanuim

Can the Pro IQ line be used on high heat on the stove?

Best Answer: Pro IQ can be used on high heat, but Scanpan suggests you keep the use of high heat to a minimum to prolong the life of your cookware
