Excellent product/price
Amazing. We've owned a classic for years, loved it and find these new ProIQ skillets a terrific advance. If you follow the directions and heat before you put any oil in the pan nothing sticks even with little to no fat of any kind. Cleans like a charm. We're thrilled

Love my Scanpans!!!
OMG! I can't say enough about my scanpan skillits. They are awesome and cook like a dream. Clean up is easy, no need for oils. I previously had high end nonstick but after lots of use they started peeling. So I went into Sur La Table and talked with the helpful sales women who showed me these. I immediatly went home and cooked dinner with them. They were perfect and I couldn't be more pleased. I cook lots of scrambled eggs for my son and clean up is easy. No need to ever soak them. The final selling point for me was that they were made and guarenteed not to peel

LOVE these pans!
We were hesitant at first because of the price, but after purchasing we are completely satisfied! I bought the two pans with my Christmas Gift Cards and were so happy with the way the pans perform. Literally, clean with a wipe and cook very consistent. I read a review that it was ""light"", but find them to be very sturdy pans. Would totally recommend them to anyone. Looking forward to buying more of the products

Very good non stick but missing on a few key items
The non-stick does seem to work very well without an added fat. It cleans up very easily. However, the pan itself seems to be rather thin and a little lighter weight than I'd like while the handle is very heavy and thick. It makes the pan off balance with the heavy weight of the handle and lighter weight pan. Also, the holes drilled in the end of the pan handles are round instead of oval like on most pan/pot handles, which makes it very difficult to hang on a pot rack from the handles. I had to purchase special hooks for my pot rack just to hang these pans while I have over a dozen others that hang fine with normal hooks. Makes the pan a little unsecured while hanging

Best non stick pan ever
I love these and am looking forward to replacing the rest of my cookware. These are literally the best pans ever, nothing sticks to them and they are cleaned with a simple swipe of the sponge

scan pan the best
I was skeptical when the saleswoman was raving about these pans but they are amazing. I am on a diet that allows very little fat and these fry and saute with almost no fat without sticking. They brown beautifully and clean up with a swipe of a paper towel. I am going to replace all of my current frying/sauteeing pans with these

Best non stick pan ever
I've owned Scanpans for years. They are the BEST non-stick pans out there. They do not scratch of chip off into my food like most coated pans do. I can still cook scrambled eggs in my 10 year old pan and they come right out. Do not use sprays like PAM on them or you will ruin them. I did that years ago and Scanpan kindly replaced it for free. The weight and balance on the pans is perfect and they do a wonderful job on all saut� and fry recipes. You have to try them.

Experience has shown the quality.
We have been using these pans for almost two years now, and they are just as good as ever. They clean up easily but still allow a fond to form when cooking. The non-stick coating is like new. I have since bought more pans in the line because these are so wonderful.

What is the difference between the Pro IQ, CTX and CSX scanpan

BEST ANSWER: Pro IQ cookware has a hard anodized, ceramic titanium interior and exterior. Because it is the newest of the Scanpan cookware lines, it has a newer, slightly different design as far as handles and lids go. The base and core are both made of aluminum to ensure induction compatibility.CTX has a hard anodized, ceramic titanium interior and a stainless steel exterior. It is induction compatible.CSX has a stainless steel exterior and interior. It, too, is induction compatible.CTX and CSX are nearly identical, with the exception of the interior. Both have vented glass lids, ergonomic handles, and an 18/10 stainless steel finish
can I cook with Olive Oil?

According to ScanPan olive oil is not something that will cause a defect in the pan, you will want to use at no more than a medium heat because olive oil has a low flash point and the ScanPan cookware will heat quickly because of its aluminum core.

Answer: SCANPAN CTX, IQ and CSX are suitable for induction ranges. The outer layers of the CTX and CSX are made of 18/0 stainless steel, which is magnetic.

BEST ANSWER: Althought this set does not come with lids, there are Scanpan lids sold individually that will fit them. We carry the one for the 9"" skillet, but not the 11""
Differences and what my expectations should be regarding the different skillets.

Scanpan pro IQ and CTX: using metal utensils is ok. So no scratches to the surface? (seems impossible but I have to ask since using metal utensils is specifically stated as safe.)Are both safe at high temperatures and after being scratched with a metal utensil?Both are dishwasher safe?Scanpan pro IQ conducts heat better? Is this the only difference?I understand from the Q & A's and details on the items that the CSX is only special because it is made with recycled materials. Otherwise it ""acts"" the same as all other non stick pans we have been using for decades?I'm trying to determine if it is worth it to pay the extra for the proIQ. Every single other non stick I have ever purchased from every single high and low end manufacturer has a low life use. Being I'm the only one that will clean them as they are supposed to and my kids are now cooking, the pans are scratched or put in the dishwasher (high heat) and tossed too quickly

BEST ANSWER: CSX is very different from CTQ (the updated version of CTX, which is no longer available) in that it is stainless steel, while the other lines are nonstick. Both Pro IQ & CTQ are dishwasher safe, can be used at high temperatures & can be used w/ metal utensils. Pro IQ & CTQ differ in that Pro IQ has a ceramic titanium interior & exterior, while CTQ has a ceramic titanium interior & a stainless steel exterior (CSX is stainless steel both outside & inside. It is NOT nonstick). CTQ--the newest Scanpan line--also has a shinier cooking surface, ensuring that any food left behind in the pan is easy to spot, which makes it easier to clean.For the record, I own Scanpan Classic, CTX & Professional, which is an older version of Pro IQ. I use them at high heat, I put them in the dishwasher & I have a terrible habit of turning food w/ a dinner fork, so I use metal utensils in them often. I've had most of my pieces for 2-3 years now & haven't had any problems. Scanpan is a very different kind of nonstick. I think you'll be pleased
How heavy are the pans?

BEST ANSWER: The 9" is the one I use the most for just my wife and I, its weight is perfect. The 11" is significantly heavier than the model I used from Ikea previously. I do most of the cooking so I don't have an issue with it, but my wife probably would avoid it. They are awesome to use. Heat distribution is outstanding.
What is the size of the 11" pan base? My induction range won't work unless it meets a minimum size.

My pan is flaking it is an IQ. My husband thinks it is Teflon, I know it can't be. What is it and how can I get rid of it?

BEST ANSWER: Hi Glenda. I believe the non stick coating is a titanium ceramic mix. Its definitely not Teflon. Mine is not flaking, and seems to be the best non-stick pan I have ever had. I suggest contacting Sur la table or the manufacturer to get a replacement.
What is the diameter of the actual cooking surfaces of both the 9" and 11" skillets?

BEST ANSWER: My 11" pan has a 9" cooking surface. The 10" pan has a 7 1/4" surface.
May be I'm the only person in the world who has overheated their pans or maybe used the wrong oil (although never a spray)! My Scanpans have a varnish-like coating that I can't remove. I've tried heating them with baking soda, etc. Scanpan suggested Bar Keepers Friend which didn't work very well. Any suggestions?

BEST ANSWER: Oils with low smoke points can burn & carbonize onto your cookware. Unfortunately, if this has happened, it's nearly impossible to remove.
Nearly every non-stick pan I've ever owned (including an expensive Calphalon), over time ends up with a nasty buildup from the spray oils.
Has anyone had and used these pans over a long enough period of time to say that they don't end up with that buildup? That buildup can be scraped off with a fingernail but I've not yet found another way to adequately clean the pans.

Will these Scanpans be free from that kind of buildup?

BEST ANSWER: Scanpan will not be free of this build up, but that's largely because no aerosol spray of any kind should be used on nonstick cookware.
Not only do the particles in nonstick spray get into the cooking surface, expand & compromise the integrity of the cookware overtime, but nonstick spray exposed to the kind of direct, high heat used when cooking on the stove begins to carbonize. This is what leads to the build up.
While it's okay to use fat for cooking with nonstick cookware, you should stick to liquids & solids & never use the spray. In fact, I think use of cooking sprays likely voids the warranty for most nonstick cookware lines.
Can this pan be used in the oven under a broiler? I have a recipe that starts off on the top of the stove, and ends under a broiler?

BEST ANSWER: Before first use
•Remove all labels.
•Wash the product in hot soapy water with a nylon brush, a cloth or a sponge and let it dry.
•Never use metal scourers or abrasives to clean your pot or pan.
•It is important that the product is completely dry before storing.

Everyday cleaning
•Never pour cold water on a hot pan; it can cause the bottom to warp and become uneven. Extreme temperatures can cause any type of metal to bend.
•Avoid the use of extremely high heat. Only use low to medium heat.
•It is important to remove all traces of grease and food residue from your pot or pan after each use to ensure optimum performance.
•Never use oven cleaner.

Removing burnt or dried out food residue
•Allow to cool.
•Fill halfway with three parts cold water and one part washing-up liquid or vinegar. Place on stove and boil on medium heat until the residue loosens.
•Allow to cool again, remove the food residue and clean according to the “Before first use” cleaning instructions.

Removing heat marks from stainless steel pans

Heat marks are stripes (typically bluish brown) that appear on the surface of stainless steel. They typically occur when the pan is heated too rapidly, causing oxidation of the external surface. This does not harm the pan or affect its performance.
•Prepare a mixture of water and a stainless steel cleaning agent.
•Alternatively, you can choose a natural mixture of water and 2 tbsp baking soda.
•Pour the mixture on the stainless steel.
•Wipe with a soft rag in a gentle, circular motion to remove the marks gently and slowly.
•Never use oven cleaner on your pot or pan.
Can these fry pans be used in the broiler - frittatas?

How do you determine the size of the pan?

I already have one scan pan and love it. Mine is 7"" as measured on the bottom of the pan. If I measure the top between the sides it is 9""How is the correct measurement taken

induction capability

Several of the scanpan series (ie, ctx, pro IQ etc) have induction capability. Can you rank them in their efficiency using INDUCTION cooktop? They seem to have different compositions

BEST ANSWER: I would say that the CTX line is likely to be more efficient. CTX pieces have an exterior that is made completely of induction compatible stainless steel, where as the Pro IQ line only has an induction compatible disc at the bottom. IQ is another Scanpan line that is induction compatible. I would say that line would be equally as efficient as thge Pro IQ, because they both have the same disc
