Serves: Yields 10 —12 pops
Ingredients:
- 1 cup water
- 1 cup sugar
- 4 cups mixed dark fruit (e.g. blackberries, dark cherries or blueberries)
- 1 cup plain yogurt
- 4 teaspoons fresh lemon juice
- 3 tablespoons fresh mint leaves
Procedures:
In a small saucepan, bring the water and sugar to a boil. Remove from heat and allow to cool.
In a medium bowl, combine the fruit, yogurt, lemon juice and mint leaves. Add the sugar solution. Using an immersion blender, blend until completely smooth. Add more lemon or sugar to taste.
Pour the mixture into the mold of your choice and freeze, about three hours.
