Serves: Yields 3—4 servings
Ingredients:
- 1 tablespoon ground coffee
- 1 tablespoon chili powder
- ½ tablespoon brown sugar
- 1 teaspoon black pepper
- 1 tablespoon salt
- 1 pound brisket
- 2 tablespoons olive oil
- 3 tablespoons water
- 1 pinch of Sur La Table® Hickory Smoked Sea Salt
Procedures:
Preheat oven to 350°F. Warm a medium-sized French oven on the stove over medium high heat.
Combine the coffee, chili powder, brown sugar, pepper and salt and spread the mixture out on a flat surface. Roll the brisket through the coffee mixture, coating all sides of the meat.
Add the olive oil to the French oven and allow to get hot. Sear the brisket on both sides for about two minutes. Add water to the pot and cover. Bake for 3½—4 hours, until the meat is tender and sliceable.
