Vegetable Soup

Serves: Serves 1 to 2


  • 3 cups broth or water plus bouillon cube
  • ½ small carrot
  • ¼ green bell pepper
  • ¼ red bell pepper
  • 1 small onion
  • 1 clove garlic
  • 1 small tomato, or ¼ cup canned, diced
  • Salt
  • Pepper
  • Olive oil

  • Procedures:

    For use with the Lékué Cooking Bag

    Cut the tomato into quarters, remove the seeds and dice into ½" pieces. Finely mince the garlic and dice the remaining vegetables into ½ inch squares. Put all of the vegetables into the Lékué Cooking Bag and add the broth or water, a tsp. of salt and ½ tsp. pepper.

    Leave the bag open and place in the microwave. Cook for 15 minutes at 800 watts. The vegetables should be tender. If they aren’t, microwave for another minute or so. Times may vary depending on the size of the vegetables.

    When the soup is done, pour into bowls and garnish with drizzles of olive oil. Sprinkle with grated cheese, if you desire, and serve.

    If you want to save some of the soup for a later time, simply seal the bag and put into the freezer until ready to eat. Thaw in the fridge before re-heating in microwave, or for instant use, place sealed bag in a bain-marie.
