Raw, unfiltered and produced from a single flower varietal—star thistle—this thick and creamy honey has soft notes of cinnamon and a long, sweet finish. It is considered one of the finest honeys in the United States and is sometimes fraudulently re-labeled and sold as the scarce and expensive sourwood honey of the Appalachian Mountains.
This singular honey can be eaten alone on a spoon. It also pairs well with any tea and is the finishing touch when served with blue cheese or alongside any cheese fondue.
Raw and unfiltered honey contains pollen and wax particles (which are typically removed during the commercial processes and heating and micro-filtration) that may cause crystallization. This does not affect the honey’s quality or taste, and warming restores clarity and a liquid state. Product of the USA.
