Casa Pons is devoted to growing and producing superior-quality olive oils. The Pons Family dedication to the olives of the Catalonia region of Spain originated in 1945 from the tradition of four family generations.
The Arbequina olives are harvested by hand on Casa Pons’ 750 acres in the province of Lleida, in northern Spain. The different phases which the olives go through, from the pruning in the spring to the flowering and harvesting in late fall, emphasize the high quality of the fruit and the product.
After initially separating the leaves and twigs, the olives, with their pits, are reduced to a paste using stones. This paste is then cold-extracted at a temperature under 97°F. The intense golden liquid obtained contains oil and vegetable water, later separated in centrifuges. The oil is immediately stored in underground tanks, where it stays fresh until bottled. |
